How to Make a Refreshing Pickled Radish Salad
I received some delicious pickled radishes (Jjanmu) from my in-laws! I’m planning to enjoy them with a warm bowl of freshly steamed rice. Let’s make a flavorful salad with this preserved delight. This Jjanmu Muchim, with its satisfying crunch and savory-sweet-spicy taste, is perfect as a side dish!
Main Ingredients- 1 Pickled radish (Jjanmu), adjust quantity based on size
- 1/3 stalk green onion (mostly the white part)
Seasoning Ingredients- 3 Tbsp Gochugaru (Korean chili flakes), adjust for spice preference
- 2 Tbsp Sugar, adjust sweetness to taste
- 1 Tbsp minced garlic (use fresh garlic)
- 2 Tbsp Perilla oil (for a nutty aroma)
- A pinch of toasted sesame seeds (for garnish and nutty flavor)
- 3 Tbsp Gochugaru (Korean chili flakes), adjust for spice preference
- 2 Tbsp Sugar, adjust sweetness to taste
- 1 Tbsp minced garlic (use fresh garlic)

Cooking Instructions
Step 1
First, it’s crucial to reduce the saltiness of the pickled radish. Cut the pickled radish into bite-sized pieces (about 1cm square) and soak them in cold water. Change the water 2-3 times to gradually leach out the salt, ensuring it’s not too salty. Once the desired saltiness is reached, drain the radish thoroughly in a colander.
Step 2
Place the drained pickled radish in a bowl. Add 1 Tbsp of minced garlic and the finely chopped green onion. Then, add 2 Tbsp of sugar for sweetness and gently mix to allow the seasonings to begin penetrating the radish.

Now, let’s add the spicy kick and savory aroma. Add the remaining 3 Tbsp of Gochugaru and 2 Tbsp of fragrant perilla oil. Mix thoroughly with your hands, gently tossing the radish to ensure the seasonings are evenly distributed. Be careful not to overmix, as this can make the radish mushy.
