Main Ingredients- 300g Pork (thinly sliced for japchae)
- 1 Green Bell Pepper
- 1 Red Bell Pepper
- 1 Onion
- 3 Korean Green Chilies (adjust for spiciness)
- A small amount of Carrot
Pork Marinade- 1 Tbsp Soy Sauce
- 1/2 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (like Mirin)
- A pinch of Black Pepper
Stir-frying Sauce- 2 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligodang (or corn syrup)
- A pinch of Black Pepper
- 2 Tbsp Chili Oil
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (like Mirin)
- A pinch of Black Pepper
Stir-frying Sauce- 2 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Oligodang (or corn syrup)
- A pinch of Black Pepper
- 2 Tbsp Chili Oil
Cooking Instructions
Step 1
In a large bowl, place the thinly sliced pork. Add all the ingredients for the pork marinade: 1 Tbsp soy sauce, 1/2 Tbsp minced garlic, 2 Tbsp cooking wine, and a pinch of black pepper.
Step 2
Gently mix the marinade into the pork with your hands until well combined. Let it marinate for about 10 minutes. This step tenderizes the pork and removes any unwanted odors.
Step 3
Prepare the vegetables: remove seeds from the green and red bell peppers and slice them into thin strips (about 0.5 cm thick and 5 cm long). Slice the onion similarly. Thinly julienne the carrot. Slice the Korean green chilies diagonally for a spicy kick.
Step 4
Heat about 1 Tbsp of cooking oil in a wide pan over medium-high heat. Add the marinated pork and stir-fry, breaking it up with chopsticks or a spatula to prevent clumping, until it’s almost cooked through.
Step 5
Once the pork is nearly done, add all the prepared vegetables (bell peppers, onion, carrot, and green chilies) to the pan. Stir-fry together until the vegetables are slightly softened but still have a bit of crispness.
Step 6
When the vegetables are partially cooked, add all the stir-frying sauce ingredients: 2 Tbsp oyster sauce, 1 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp oligodang, a pinch of black pepper, and 2 Tbsp chili oil. Stir-fry quickly over high heat, making sure to keep stirring to prevent burning.
Step 7
Add an additional 1 Tbsp of minced garlic and sprinkle with sesame seeds (optional, for added aroma). Stir everything together one last time to ensure the sauce coats all ingredients evenly.
Step 8
Once everything is cooked and glossy, remove from heat. Serve hot on a plate. Enjoy your delicious Gochu Japchae with rice or steamed buns!
