Main Ingredients
- 500g thinly sliced pork belly (daepae samgyeopsal)
- 1/2 pack bean sprouts (approx. 150g)
- 1/2 stalk green onion
- 10 perilla leaves (kkaennip)
- 1 medium onion
- 1 round of oligosaccharide (approx. 1-2 Tbsp)
Sauce
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp mirin or cooking wine
- 2 Tbsp sugar
- 1 Tbsp minced garlic
- Pinch of black pepper
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp mirin or cooking wine
- 2 Tbsp sugar
- 1 Tbsp minced garlic
- Pinch of black pepper
Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly under running water and drain them in a colander. Thinly slice the onion and the white parts of the green onion into long strips.
Step 2
In a large bowl, combine the thinly sliced pork belly with the sliced onion. Add all the sauce ingredients (1 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp mirin, 2 Tbsp sugar, 1 Tbsp minced garlic, pinch of black pepper). Mix well by hand, ensuring the sauce is evenly distributed. Let it marinate for at least 10 minutes for enhanced flavor.
Step 3
In a heated pan or pot, generously layer the bottom with the prepared bean sprouts. Since the bean sprouts will shrink as they cook, it’s best to use a plentiful amount.
Step 4
Arrange the marinated pork belly nicely over the bean sprouts. Top with the sliced green onions. If you prefer more spice, you can add thinly sliced Cheongyang peppers or mushrooms.
Step 5
Now, reduce the heat to medium-low and cover with a lid for about 5 minutes. Once the pork releases its juices and the bean sprouts start to exude moisture, remove the lid and stir well to cook. Be careful not to burn it.
Step 6
When the pork is cooked through and the sauce has slightly reduced, just before turning off the heat, drizzle in the oligosaccharide for sweetness and a tiny bit of sesame oil for aroma.
