Spicy and Sweet Kimchi Pork Stir-fry (Jeyuk Bokkeum)
Homemade Kimchi Pork Stir-fry with Pork Shoulder: Delicious with Tofu!
Delicious on its own or served with tofu! This is a wonderfully flavorful and satisfying spicy and sweet stir-fried pork and kimchi dish.
Main Ingredients- Pork 400g (Pork shoulder recommended)
- Green onion 1 stalk
- Kimchi 1 paper cup (well-fermented kimchi)
- Onion 1/2
For Marinating & Stir-frying Pork- Soju 2 Tbsp (Mirin or cooking wine can be substituted)
Flavorful Sauce- Soy sauce 3 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Sugar 1 Tbsp
- Minced garlic 1 Tbsp (heaping)
- Sesame seeds 1 Tbsp
- Cooking oil 2 Tbsp
- Sesame oil 1 Tbsp
- Soju 2 Tbsp (Mirin or cooking wine can be substituted)

Cooking Instructions
Step 1
First, prepare the ingredients: thinly slice the onion and cut the green onion diagonally into bite-sized pieces. Having your ingredients prepped makes the cooking process much smoother.
Step 2
In a bowl, combine the sauce ingredients: 3 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp sugar, 1 heaping Tbsp minced garlic, 1 Tbsp sesame seeds, and 2 Tbsp cooking oil for stir-frying. Mix well to create a delicious sauce. Making the sauce in advance allows the flavors to meld beautifully.
Step 3
Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the pork shoulder and begin to stir-fry. To prevent any gamey odor, add 1-2 Tbsp of soju or cooking wine while frying. This ensures a clean, pleasant taste. Continue to stir-fry until the pork changes color and is mostly cooked through.
Step 4
Once the pork has changed color and is partially cooked, add the well-fermented kimchi, sliced onions, and diagonally cut green onions to the pan. Pour in the prepared sauce all at once. Stir-fry everything together over high heat until the kimchi and sauce are well combined with the pork. Ensure everything is evenly coated.
Step 5
When all the ingredients are nicely stir-fried, drizzle in 1 Tbsp of sesame oil just before turning off the heat. Adding sesame oil at the end preserves its fragrant aroma and nutty flavor.
