Jjolmyeon Ingredients

  • 1 pack Jjolmyeon noodles
  • 200g bean sprouts
  • 3-4 cabbage leaves
  • 1/2 red onion
  • 1/2 carrot
  • 2 hard-boiled eggs
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, wash the bean sprouts thoroughly. You can either steam them for 1-2 minutes until they are slightly wilted, or blanch them in boiling water for the same amount of time. Blanching them briefly will help maintain their crisp texture.

Step 1

Step 2

(Tip) If you have a steamer or a multi-cooker, you can conveniently cook the eggs and steam the bean sprouts simultaneously, saving you valuable time.

Step 2

Step 3

Peel the red onion and slice it thinly into julienne strips. Similarly, julienne the cabbage and carrot. Thinly sliced vegetables integrate better with the Jjolmyeon noodles.

Step 3

Step 4

(Tip) If you have preserved radish for naengmyeon (Korean cold noodles), adding it will enhance the overall flavor profile. Its sweet and sour taste complements Jjolmyeon wonderfully.

Step 4

Step 5

Boil the Jjolmyeon noodles in boiling water for about 5 minutes, or until chewy. Stir occasionally to prevent them from sticking together. Once cooked, drain the noodles and rinse them thoroughly under cold running water, rubbing them gently. This step is crucial for achieving that signature chewy texture.

Step 5

Step 6

After rinsing, drain the Jjolmyeon noodles in a colander to remove all excess water. Any remaining water can dilute the sauce and affect the flavor.

Step 6

Step 7

Peel the hard-boiled eggs and cut them in half for serving.

Step 7

Step 8

Now, let’s make the delicious Jjolmyeon sauce! In a bowl, combine 1 Tbsp gochugaru, 3 Tbsp gochujang, 1 Tbsp minced garlic, 2 Tbsp oligodang, 3 Tbsp vinegar, 2 Tbsp sesame oil, 1 Tbsp sugar, and 1 Tbsp soy sauce. Mix everything well. This golden ratio recipe balances sweetness, sourness, and spiciness, ensuring a delightful taste for everyone.

Step 8

Step 9

Place the well-drained Jjolmyeon noodles into a serving bowl.

Step 9

Step 10

Arrange the julienned cabbage, red onion, and carrot over the Jjolmyeon. Add a generous portion of the blanched bean sprouts for a refreshing crunch. Finally, place the halved hard-boiled eggs on top and sprinkle with sesame seeds. Add your prepared sauce to taste and mix everything together. This spicy and sweet Jjolmyeon will surely awaken your appetite on a hot summer day!
