Main Ingredients

  • 3 King Oyster Mushrooms
  • 1/2 Tbsp Scallion (for garnish)

Spicy and Sweet Glaze

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Scallion
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Corn Syrup (or honey)
  • 1 Tbsp Sugar
  • 0.5 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • Pinch of Black Pepper
  • 3 Tbsp Water

Cooking Instructions

In a bowl, combine gochujang, gochugaru, minced scallion, soy sauce, corn syrup, sugar, minced garlic, sesame oil, black pepper, and water. Whisk until all ingredients are well blended and there are no lumps. Set the glaze aside.

Slice the king oyster mushrooms into pieces about 0.5 to 1 cm thick. Avoid slicing them too thinly, as they might become mushy when cooked.

Heat a non-stick pan over medium heat without adding any oil. Place the sliced mushrooms in the pan. Lightly sprinkle them with salt and pepper to season. The mushrooms will release their own moisture as they cook.

Grill the mushrooms for a few minutes until one side is golden brown. Flip them over and grill the other side until it’s also nicely browned. This step helps to evaporate excess moisture and achieve a chewy texture.

Once the mushrooms are grilled, brush them generously with the prepared gochujang glaze on both sides using a pastry brush. Arrange the glazed mushrooms in the basket of your air fryer. Air fry at 180°C (350°F) for 3 minutes. (Adjust cooking time based on your air fryer’s specifications.)

After 3 minutes, carefully remove the mushrooms from the air fryer. Flip them over to ensure even coating, brush with any remaining glaze, and return them to the air fryer.
