First, prepare the somen noodles, which are the foundation of this dish. Measure out approximately 80g of somen noodles. While it might seem like a small amount, it’s a satisfying portion for one person.

Wash the fresh green peppers thoroughly, remove the stems, and finely chop them into small pieces, about 0.5cm thick. The crisp texture and spicy aroma of the green peppers will truly elevate the flavor of your bibim guksu.

Now, it’s time to make the delicious seasoning sauce. In a bowl, combine 1/2 Tbsp of minced garlic, 1 Tbsp of vinegar for a tangy kick, 2 Tbsp of sugar for sweetness, 3 Tbsp of soy sauce for umami depth, and 1 Tbsp of sesame oil for a nutty aroma. Add the chopped green peppers and a pinch of salt for seasoning. Stir everything together until well combined to create your flavourful sauce.

Bring a generous amount of water to a rolling boil in a large pot. Once boiling, add a pinch of salt to season the water, then add the prepared somen noodles. It’s crucial to cook the somen noodles until they have a pleasant chewy texture, so aim to cook them for about 30 seconds to 1 minute less than the time indicated on the package. Stir gently with chopsticks to prevent the noodles from sticking together.

Once the somen noodles are cooked to perfection, drain them in a colander. Immediately rinse them under cold running water several times. Rinsing in cold water makes the noodles wonderfully firm and removes excess starch, ensuring a more delightful eating experience. Make sure to drain them as thoroughly as possible.

Place the well-drained somen noodles in a serving bowl. Generously spoon the prepared spicy and sweet green pepper sauce over the noodles. Gently mix and toss the noodles with the sauce until every strand is coated. Your delicious green pepper bibim guksu is now ready!
