How to Make Gochujang Stir-fried Dried Shredded Squid: A Soft and Delicious Recipe

This is my partner’s absolute favorite banchan (side dish)! I’ve made stir-fried dried shredded squid with a gochujang sauce. It’s wonderfully soft and flavorful, perfect for a banchan.

Main Ingredients

  • 153g Dried Shredded Squid (Jinmichae)
  • 1.5 Tbsp Mayonnaise

Cooking Instructions

Step 1

In a large bowl, place the dried shredded squid (Jinimchae). Use scissors to cut it into bite-sized pieces, about 5cm long. This helps the sauce coat evenly and makes it easier to eat.

Add 1.5 Tbsp of mayonnaise to the dried squid. This is the secret ingredient to making the jinmichae tender and moist! Mayonnaise adds a rich, nutty flavor and prevents the squid from becoming tough, making it much more enjoyable.

Put on disposable gloves and gently mix the mayonnaise with the dried shredded squid. Massage it in so that each strand is coated with mayonnaise. This ensures a soft texture.

Now, let’s make the delicious gochujang sauce! Combine 1.5 Tbsp sugar, 4 Tbsp oligodang, 1 Tbsp olive oil, 1 Tbsp water, 1 Tbsp gochugaru, 2 Tbsp gochujang, and finally 0.5 Tbsp sesame oil in a separate bowl. Mix them well. Using plenty of oligodang will give the dish a beautiful shine and enhance its sweetness.

Before adding the squid to the sauce, pour the sauce ingredients into a pan over medium-low heat. Stir with a spoon in a circular motion. This helps to dissolve any clumps and creates a smooth, flavorful base for the stir-fry.

Once the sauce begins to bubble, give it another quick stir, then immediately turn off the heat. Be careful not to overcook the sauce, as it can burn easily.

With the heat off, add all the mayonnaise-coated dried shredded squid to the pan.

Using a spoon or spatula, gently toss the squid in the red gochujang sauce until it’s evenly coated. The residual heat will help the sauce adhere beautifully to the squid.

Finally, sprinkle a generous amount of sesame seeds over the top and mix once more. Your soft, spicy, and sweet gochujang stir-fried dried shredded squid is ready! It’s a perfect side dish for rice or a delicious snack.
