Spicy and Sweet Gochujang Pork Stir-Fry Recipe

Today, I’ve decided on a hearty pork dish: Jeonbokkeum, a spicy and sweet stir-fried pork. By adding plenty of fresh vegetables and stir-frying them with gochujang, your home will transform into a gochujang bulgogi hotspot, no need to visit a restaurant! I’ll show you how to make a side dish that will earn thumbs-up from your family!
Main Ingredients
- Pork shoulder 600g, cut into bite-sized pieces
- 1/2 Onion, thinly sliced
- 1 Green onion, diagonally sliced
- 1/3 Carrot, thinly sliced
- 1 Korean chili pepper, finely chopped (adjust spice level)
- 1 Red chili pepper, finely chopped (for color)
- 1 Tbsp Cooking oil
Spicy & Sweet Marinade
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Minced garlic
- 3 Tbsp Soy sauce
- 3 Tbsp Oligosaccharide (or corn syrup, malt syrup, allulose)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 0.5 Tbsp Sugar (adjust sweetness)
- 1 Tbsp Cooking wine (Mirin)
- Pinch of Black pepper
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Minced garlic
- 3 Tbsp Soy sauce
- 3 Tbsp Oligosaccharide (or corn syrup, malt syrup, allulose)
- 3 Tbsp Gochugaru (Korean chili flakes)
- 0.5 Tbsp Sugar (adjust sweetness)
- 1 Tbsp Cooking wine (Mirin)
- Pinch of Black pepper
Cooking Instructions
Step 1
First, take the 600g of pork shoulder, remove it from the packaging, and cut it into bite-sized pieces suitable for stir-frying. If desired, you can briefly rinse it under cold water and pat it dry.
Step 2
Thinly slice the onion and carrot. Cut the green onion diagonally and finely chop the Korean and red chili peppers. If you have other vegetables like cabbage or mushrooms on hand, feel free to add them for extra flavor and texture.
Step 3
Let’s make the delicious marinade that will make this Jeonbokkeum shine! You can mix all the marinade ingredients together beforehand and add them when stir-frying, or simply add them one by one directly into the pan as you cook. The point is, you can even just toss everything in and stir-fry for a tasty result!
Step 4
A tip for the marinade! Use a generous 2 tablespoons of gochujang. While oligosaccharide adds sweetness, it’s not overly sweet, so don’t worry. You can substitute oligosaccharide with corn syrup, malt syrup, or for a healthier option, allulose. Mix all the ingredients thoroughly to create your delicious Jeonbokkeum marinade.
Step 5
Pork shoulder can be a bit lean, so it’s a good idea to add about 1 tablespoon of cooking oil to the pan before stir-frying to prevent sticking and ensure it cooks evenly.
Step 6
To help remove any gamey odor from the pork, sprinkle a little black pepper over it before stir-frying. The peppery aroma enhances the pork’s flavor and neutralizes any unpleasant smells.
Step 7
Heat the oil in the pan, add the pork, and stir-fry until it’s about 80% cooked through and the color has changed to opaque. Stir the meat occasionally to prevent it from clumping together. Stir-frying it partially at this stage helps to retain its juiciness.
Step 8
Once the pork is about 80% cooked, add all the prepared vegetables to the pan. Then, pour in the delicious gochujang bulgogi marinade you prepared.
Step 9
Now, it’s crucial to stir-fry everything together until the flavors meld beautifully. Cook over medium-low heat (not high heat) to allow the sauce to coat the pork and vegetables evenly and to prevent burning. Stir-fry for about 5-7 minutes until the sauce thickens slightly.
Step 10
When a mouthwatering aroma fills the air and the stir-fry takes on a rich, appealing color, you know it’s cooking perfectly! Continue to stir-fry until the sauce is well-absorbed, glossy, and the vegetables are tender yet still slightly crisp. Your delicious Jeonbokkeum is ready! Serve it hot over steamed rice for a delightful meal.
