  • Pork shoulder (or leg) 500g
  • 1/2 Onion
  • 2/3 Scallion

Cooking Instructions

Step 1

1. First, prepare the vegetables. Chop the scallion (about 2/3 of a large one) into large pieces. Slice the half onion thickly into strips. Cutting them this way will help them retain a pleasant texture when stir-fried.

2. Now, let’s prepare the pork. I’m using pork shoulder for a tender texture. If you’re using fresh pork, place it on paper towels and gently pat it dry to remove any excess blood. Removing the blood is key to a clean, fresh flavor without any gamey smell. Once the blood is removed, place the pork directly into your stir-fry pan.

3. It’s time to make the delicious marinade! Add the minced garlic (1 Tbsp), gochujang (3 Tbsp), gochugaru (2 Tbsp), oligodang (2 Tbsp), soy sauce (2 Tbsp), mirin (2 Tbsp), sesame seeds (1 Tbsp), sesame oil (1 Tbsp), and a pinch of black pepper directly to the pan with the pork. Also, add the sliced onion and scallions prepared in step 1. Now, gently mix everything together with your hands, ensuring the marinade coats the pork and vegetables evenly. Let this marinate for about 1 hour in the refrigerator; this allows the flavors to meld beautifully.

Step 4

4. After marinating for an hour, you’ll notice that the vegetables have released some moisture. We’ll stir-fry the pork in this state. You generally don’t need to add extra water, but if the marinade seems too thick, you can add a tiny bit of water.

Step 5

5. Add about 70ml of water to the pan and begin stir-frying over medium heat. Cook for about 7-8 minutes, stirring occasionally, until the pork is thoroughly cooked. It’s important to stir frequently to prevent sticking or burning. Towards the end of cooking, taste the bulgogi. If it’s not salty enough, add a little more soy sauce. If it’s not sweet enough, add a bit more oligodang to adjust the sweetness to your preference. Your delicious Gochujang Pork Bulgogi is ready to enjoy!
