Today, we’ll be making a classic Jeyuk Bokkeum, a beloved Korean dish that’s both spicy and sweet, using this versatile cut. Main Ingredients- Pork shoulder 600g
- Green onion 1 stalk
- Onion 1/2 medium
- Carrot 1/2 medium
- Sesame seeds for garnish
Spicy and Sweet Sauce- Gochugaru (Korean chili flakes) 2 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soy sauce 6 Tbsp
- Sugar 2 Tbsp
- Sesame oil 1 Tbsp
- Oligosaccharide (for shine and sweetness) 1/2 Tbsp
- Black pepper 1 tsp
- Minced garlic 1 Tbsp (generous)
- Minced ginger 1/2 tsp (or ginger powder)
- Gochugaru (Korean chili flakes) 2 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Soy sauce 6 Tbsp
- Sugar 2 Tbsp
- Sesame oil 1 Tbsp
- Oligosaccharide (for shine and sweetness) 1/2 Tbsp
- Black pepper 1 tsp
- Minced garlic 1 Tbsp (generous)
- Minced ginger 1/2 tsp (or ginger powder)
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to the Jeyuk Bokkeum. Slice one green onion diagonally into about 0.5cm thick pieces. Slicing them not too thinly will give them a pleasant texture when stir-fried.

Next, prepare the carrot and onion similarly to the green onion. Slice the carrot thinly into half-moon shapes, about 0.3cm thick, as this allows them to cook quickly. Slice the onion into strips.

Now, let’s make the key component for a delicious Jeyuk Bokkeum: the sauce. In a bowl, combine 2 Tbsp gochugaru, 1 Tbsp gochujang, 6 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp sesame oil, and 1/2 Tbsp oligosaccharide. For added flavor and to reduce any gamey smell, add a generous 1 Tbsp of minced garlic, 1/2 tsp of minced ginger (or a pinch of ginger powder), and 1 tsp of black pepper. Mix these ingredients well.
Step 4
Place the 600g of pork shoulder into the bowl with the sauce. Use your hands to gently massage the sauce into the meat, ensuring it coats every piece. This helps tenderize the meat and allows the flavors to penetrate.

Add the prepared green onion, onion, and carrot to the marinated pork. Gently mix everything together again with your hands, ensuring the vegetables are also evenly coated with the sauce.

Cover the bowl with plastic wrap or transfer the mixture to an airtight container. Let it marinate in the refrigerator for about 20 minutes. This marination time allows the flavors to meld beautifully, resulting in a more delicious Jeyuk Bokkeum.

Heat a wok or a large skillet over high heat. Add the marinated pork and vegetables. Stir-fry quickly over high heat. Cooking on high heat prevents excess moisture from releasing, keeping the pork tender and juicy. Continue to stir-fry until the vegetables are softened and the pork is fully cooked through.
