Main Ingredients

  • 200g anchovies for stir-frying

Spicy and Sweet Sauce

  • 1.5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp soy sauce
  • 3 Tbsp cooking syrup (or oligodang/corn syrup)
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare the anchovies for stir-frying. Place them in a sieve and shake gently to remove any dust or small particles, ensuring a cleaner dish. You can lightly pan-fry the anchovies beforehand to remove excess moisture for a crispier texture, but if you’re short on time, simply shaking off the dust is fine.

In a bowl, combine all the sauce ingredients: gochujang, soy sauce, cooking syrup, cooking wine, and cooking oil. Mix them thoroughly with a spoon until well combined. It’s important to ensure there are no lumps and the sauce is evenly blended.

Heat a pan over medium heat and pour in the prepared sauce. Let it simmer until the edges begin to bubble. Cooking the sauce briefly like this helps to develop a deeper, richer flavor.

Once the sauce starts to boil, reduce the heat to low. Be careful not to scorch the sauce by cooking over high heat. Now, add the prepared anchovies to the sauce over low heat.

After adding the anchovies, gently stir them with a spatula or spoon to ensure the sauce coats them evenly. Stir-fry gently to avoid breaking the anchovies.
