While they’re great stir-fried with anchovies or fish cakes, today we’re making a gochujang-based salad that’s perfect as a side for rice. Main Ingredients- Blanched garlic scapes 200g
Seasoning Ingredients- Soy sauce 2 Tbsp
- Plum extract 1 Tbsp
- Corn syrup or oligosaccharide 2 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Sesame oil 0.8 Tbsp
- Soy sauce 2 Tbsp
- Plum extract 1 Tbsp
- Corn syrup or oligosaccharide 2 Tbsp
- Gochujang (Korean chili paste) 2 Tbsp
- Gochugaru (Korean chili flakes) 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Sesame oil 0.8 Tbsp
Cooking Instructions
Step 1
First, clean the garlic scapes. Blanch them in boiling water with a pinch of salt for about 1-2 minutes. This helps preserve their crunchy texture while softening them slightly. Immediately plunge the blanched scapes into cold water to stop the cooking process, then drain them thoroughly. Cut the scapes into bite-sized pieces, about 5cm long.
Step 2
In a mixing bowl, combine the soy sauce (2 Tbsp), plum extract (1 Tbsp), and corn syrup or oligosaccharide (2 Tbsp). Mix these base ingredients well; they will add a wonderful savory depth to the garlic scapes.
Step 3
Add the gochujang (2 Tbsp) and gochugaru (1 Tbsp) to the bowl, followed by the toasted sesame seeds (1 Tbsp) for a nutty aroma. Stir everything together until you have a smooth, well-mixed seasoning paste. Feel free to adjust the amount of soy sauce or gochujang to your preference.
Step 4
Add the prepared garlic scapes to the seasoning paste. Gently toss and mix, being careful not to break the scapes, ensuring that each piece is evenly coated with the delicious gochujang dressing.
