Main Ingredients
- 1 pack Duck Meat (approx. 300-400g)
- 1/2 cup Mirin (Rice Wine) (100ml)
- A pinch of Black Pepper
- 1 tsp Minced Garlic
- A little Ginger Powder (or 1/2 tsp minced fresh ginger)
- 1 Tbsp Gochugaru (Korean Chili Powder)
- 2 Tbsp Gochujang (Korean Chili Paste)
- 1/2 cup Soy Sauce (100ml)
- 2 Tbsp Sugar
Cooking Instructions
Step 1
Duck meat is known for its health benefits and delicious taste, even when simply grilled. Today, we’ll transform it into a spicy and sweet duck bulgogi, prepared ‘duck jumeok-log’ style. You can enjoy a wonderful duck dish right in your own kitchen!
Step 2
First, let’s marinate the duck to remove any gamey odor. Take your cleaned duck meat pack and place it in a bowl. Sprinkle a pinch of black pepper, add 1 teaspoon of minced garlic, and a little ginger powder. Gently mix everything with your hands, massaging the marinade into the meat. This process effectively eliminates the characteristic smell of duck.
Step 3
To the marinated duck, add 1/3 cup (approx. 60ml) of mirin (rice wine). Mirin is excellent for neutralizing any remaining gamey flavors and also adds a subtle sweetness. Give it another gentle mix. Your prepped ingredients are now ready!
Step 4
Now, let’s start stir-frying! Heat a pan over medium heat and add the marinated duck meat. Cook until the duck is about two-thirds done and has released some of its natural oils. Be careful not to cook it on excessively high heat initially, as this can burn the outside while leaving the inside undercooked.
Step 5
Once the duck is partially cooked, it’s time to make the flavorful sauce. In a separate bowl, combine 1 tablespoon of gochugaru (chili powder), 2 tablespoons of gochujang (chili paste), 1/2 cup of soy sauce, and 2 tablespoons of sugar. Mix well to create the sauce. Pour this sauce over the cooked duck in the pan. Increase the heat to medium-high and stir continuously, ensuring the sauce coats the duck evenly and simmers until cooked through. Keep stirring to prevent the sauce from burning.
Step 6
Finally, add your prepared vegetables and cook just until they wilt slightly. Your delicious duck bulgogi is now complete! Feel free to add your favorite vegetables like onions, green onions, chili peppers, and mushrooms for an even richer flavor.
Step 7
This spicy and sweet duck bulgogi, with its perfectly infused sauce, is a dish that never fails to satisfy. Enjoy it wrapped in fresh lettuce leaves with a side of rice for an truly delightful meal. Have a wonderful dining experience with this amazing duck bulgogi!
