Spicy and Sweet Dried Pollack Salad

This dried pollack salad boasts a delightful spicy and sweet flavor that awakens your appetite. It’s delicious as a simple side dish and also makes a fantastic snack to enjoy with a cold beer. Main Ingredients

  • 120g dried pollack strips
  • 45cc kelp stock (or water)
  • 1 tsp sesame seeds
  • 1/2 Korean chili pepper (optional, add for more spice)

Seasoning Ingredients

  • 1.5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp honey (or corn syrup)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp soy sauce
  • 1/2 Tbsp minced garlic

Cooking Instructions

Step 1

First, use kitchen scissors to cut the dried pollack strips into bite-sized pieces, about 5-6cm long. Cutting them to this length makes them easier to mix.

Heat a frying pan over medium heat. Add the cut dried pollack strips and stir-fry for about 2 minutes. This step helps to eliminate any fishy odor and improve the texture. Be careful not to overcook, as they can become tough.

Transfer the stir-fried pollack to a bowl. If you have a spray bottle, fill it with the kelp stock (or water) and lightly mist the pollack strips until they are slightly moistened. This makes the pollack tender and adds a savory depth. If you don’t have a spray bottle, you can gradually add the liquid a little at a time.

Add all the seasoning ingredients – gochujang, honey, gochugaru, soy sauce, and minced garlic – to the same bowl. Give them a quick mix with a spoon to combine them into a rough seasoning paste.

Pour the prepared seasoning paste over the pollack strips. Gently mix everything together with your hands, ensuring the seasoning coats the pollack evenly. Finally, sprinkle with sesame seeds and add the finely julienned Korean chili pepper (if using). Give it one last quick toss, and your delicious dried pollack salad is ready!
