  • Plum Extract (Maesilcheong) 2 Tbsp
  • Rice Syrup/Grain Syrup (Jocheong) 1 Tbsp
  • Perilla Oil (Deulgireum) 1 Tbsp
  • Sesame Seeds, a pinch

Cooking Instructions

Step 1

First, prepare the dried pollack jerky. Carefully check the jerky for any hard, bone-like pieces or sharp bits, and remove them with your fingers. It’s important to do this so you don’t accidentally poke yourself while eating! Next, cut the jerky into bite-sized pieces, about 5-7 cm long, using scissors or a knife for convenience.

Step 2

Since dried pollack jerky is quite dry, it can be tough to eat if mixed directly with seasoning. To make it tender and easier to chew, lightly moisten the jerky. Place the cut jerky in a bowl and sprinkle a very small amount of water over it, just 2-3 times, using your hand to gently distribute the moisture. This will soften the jerky, allowing it to absorb the flavors better.

Step 3

Gently mix the moistened dried pollack jerky with your hands. The goal is to ensure the moisture is evenly distributed and to loosen up any clumps, making the jerky ready to be seasoned.

Add all of these seasoning ingredients at once.
