Seasoning

  • Gochujang (Korean chili paste) 1.5 Tbsp
  • Soy sauce 0.5 Tbsp
  • Plum extract 1 Tbsp
  • Sesame seeds 0.5 Tbsp
  • Sesame oil 0.5 Tbsp
  • Salt 1 pinch
  • Gochugaru (Korean chili powder) 0.3 Tbsp

Here we have some plump and good-looking deodeok. Deodeok is rich in nutrients and is very beneficial for health when consumed regularly.

We’ll carefully peel the deodeok. While a peeler can be quick, it might remove too much of the flesh. It’s best to gently rinse off the dirt under running water, then make a lengthwise cut and twist to peel off the skin. If you want to make peeling even easier, try blanching the deodeok in boiling water for about 10 seconds. Remember, saponins in deodeok dissolve well in water, so avoid soaking it for too long.

We’ve prepared 300g of cleaned deodeok. Now, slice the deodeok diagonally into bite-sized pieces so it can absorb the seasoning well.

Let’s make the delicious seasoning! In a bowl, combine 1.5 Tbsp of gochujang, 0.5 Tbsp of soy sauce, 1 Tbsp of sweet plum extract, 0.5 Tbsp of toasted sesame seeds, and 0.5 Tbsp of fragrant sesame oil. For a touch of savory flavor, add a pinch of salt, and for a vibrant color, add 0.3 Tbsp of gochugaru. Your spicy and sweet seasoning mix is now ready!
