Main Ingredients- 800g chicken drumettes
- 1.5 cups milk (paper cup measurement)
Curry Marinade Ingredients- 2 Tbsp curry powder
- 1/3 Tbsp salt
- 2 Tbsp cooking wine (mirin or sake)
- 2 Tbsp corn syrup
- 1/2 Tbsp whole grain mustard
- 1/2 Tbsp minced garlic
- 3 Tbsp olive oil
- Pinch of black pepper
- 2 Tbsp curry powder
- 1/3 Tbsp salt
- 2 Tbsp cooking wine (mirin or sake)
- 2 Tbsp corn syrup
- 1/2 Tbsp whole grain mustard
- 1/2 Tbsp minced garlic
- 3 Tbsp olive oil
- Pinch of black pepper
Cooking Instructions
Step 1
First, we’ll remove any gamey smell from the chicken drumettes and tenderize the meat. Wash 800g of chicken drumettes thoroughly. Place them in a large bowl, pour in 1.5 cups of milk, and let them soak for 30 minutes. After soaking, rinse the drumettes under cold water and pat them dry.
Step 2
Now, let’s make the delicious curry marinade! In a separate bowl, combine 2 Tbsp curry powder, 1/3 Tbsp salt, 2 Tbsp cooking wine, 2 Tbsp corn syrup, 1/2 Tbsp whole grain mustard, 1/2 Tbsp minced garlic, and 3 Tbsp olive oil. Mix well until there are no lumps to create a smooth sauce.
Step 3
Add the milk-soaked chicken drumettes to the prepared curry marinade. Sprinkle in a pinch of black pepper. Gently toss the drumettes to ensure they are evenly coated with the marinade. For a deeper flavor, let them marinate for at least 20 minutes.

Arrange the marinated chicken drumettes in the air fryer basket, making sure they are not overlapping. This ensures even cooking and a crispier texture. Place them in a preheated air fryer set to 180°C (350°F) and cook for 15 minutes.

After 15 minutes, carefully remove the drumettes and flip them over. Increase the temperature to 190°C (375°F) and cook for an additional 10 minutes.
