Today, I made stir-fried tofu noodles with a Chinese-style flair. It’s a great dish that’s perfect for a meal. The savory and slightly spicy sauce makes this dish incredibly appealing.

Main Ingredients

  • 100g Tofu Noodles (Gundubu)
  • 120g Cabbage
  • 1 Korean Green Chili Pepper (Cheongyang Pepper)
  • 1/4 Carrot
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Cooking Oil

Seasoning

  • 2 Tbsp Oyster Sauce
  • 3/4 Tbsp Sugar
  • 0.5 Tbsp Gochugaru (Korean Red Pepper Flakes)
  • 1 Tbsp Soy Sauce

Cooking Instructions

Step 1

First, prepare about 120g of cabbage. Wash it thoroughly and then chop it into large pieces, about 2-3 cm in size, for a satisfying bite.

Finely chop 1 Korean green chili pepper (Cheongyang pepper) for a spicy kick. Feel free to adjust the amount or omit it if you prefer less heat or are cooking for children.

Julienne 1/4 carrot to add vibrant color and a crisp texture. To make julienning easier, you can slice the carrot thinly first before cutting into strips.

Rinse the dried tofu noodles (Gundubu) under running water and then drain them thoroughly in a colander. Excess water can cause the noodles to clump together when stir-frying.

Heat 2 tablespoons of cooking oil in a pan over high heat. Add the chopped cabbage, carrot, green chili pepper, and 1 tablespoon of minced garlic. Stir-fry for about 1-2 minutes until the cabbage is slightly wilted but still crisp. This quick stir-fry helps retain the vegetables’ crunch.

Now, add the drained tofu noodles to the pan. Pour in 2 tablespoons of oyster sauce for a savory depth of flavor. Stir well to ensure the noodles and vegetables are evenly coated with the sauce.

Next, add 3/4 tablespoon of sugar for sweetness and 0.5 tablespoon of Gochugaru (Korean red pepper flakes) for a spicy flavor. Continue to stir-fry, ensuring the seasonings are well distributed among the tofu noodles and vegetables.

Finally, add 1 tablespoon of soy sauce for an extra layer of umami. Stir-fry for another moment to combine all the flavors. Once everything is well incorporated, turn off the heat.
