- 1 Onion (cut into large pieces)
- 1/4 Carrot (cut into large pieces)
- 1/2 pack Mushrooms (e.g., oyster mushrooms, shiitake mushrooms, or your favorite type)
Spicy & Sweet Sauce- 2 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar (adds a refreshing tang)
- 1 Tbsp Perilla Oil (adds a nutty aroma)
- 1/2 Tbsp Allulose or Oligosaccharide (adjust sweetness to taste)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar (adds a refreshing tang)
- 1 Tbsp Perilla Oil (adds a nutty aroma)
- 1/2 Tbsp Allulose or Oligosaccharide (adjust sweetness to taste)
Cooking Instructions
Step 1
First, prepare all your ingredients: chicken breast and all the vegetables. Rinse the chicken breast thoroughly. Chop the cabbage, bell pepper, onion, and carrot into large, bite-sized pieces for a satisfying texture when cooked. Trim and prepare the mushrooms.
Step 2
Now, let’s make the signature spicy and sweet sauce for your Dakgalbi. In a bowl, combine 2 tablespoons of gochugaru, 1 tablespoon of soy sauce, 2 tablespoons of vinegar, 1 tablespoon of perilla oil, and 1/2 tablespoon of allulose (or oligosaccharide). Mix well. The vinegar adds a pleasant sourness that cuts through richness, and the perilla oil contributes a wonderful nutty depth.
Step 3
Whisk the sauce ingredients together until well combined and set aside. Having the sauce ready beforehand makes the stir-frying process much smoother.
Step 4
Arrange the prepared vegetables in your stir-fry pan or wok. Cutting them into large pieces will enhance the texture of the final Dakgalbi.
Step 5
Add the cabbage, onion, carrot, and bell pepper to the pan along with the prepared sauce. Stir-fry over high heat until the vegetables begin to soften slightly. This quick stir-fry helps retain the vegetables’ crispness.
Step 6
Once the vegetables have softened a bit, add the prepared mushrooms and chicken breast. (Tip: You can use pre-cooked chicken breast for convenience, or if using raw chicken breast, add it with the vegetables and ensure it’s fully cooked. This recipe assumes pre-cooked chicken breast.)
Step 7
Continue to stir-fry everything together for about 5 to 10 minutes, allowing the sauce to coat all the ingredients and for everything to cook through. If the mixture seems too dry, add 2-3 tablespoons of water to prevent sticking and ensure moistness.
Step 8
Finally, sprinkle some toasted sesame seeds over the Dakgalbi for a beautiful finish and extra nutty flavor. Your delicious Dakgalbi is now ready!
Step 9
Serve it over a bowl of hot rice for a hearty meal, or enjoy it wrapped in fresh lettuce leaves with pickled radish (ssammu) and steamed cabbage for an even more delightful experience. The crispness of the pickled radish and the sweetness of the steamed cabbage are a perfect match with the Dakgalbi.
Step 10
Now, take a delicious bite of your homemade Dakgalbi! Yum!
