Spicy and Sweet Chewy Noodles (Jjolmyeon)
Jjolmyeon Made in a Flash! Was It This Easy?!
Jjolmyeon was a menu item I used to eat a lot at snack bars when I was younger. I remember always choosing jjolmyeon along with fried dumplings whenever I went to a snack bar.
Ingredients- Jjolmyeon noodles 400g
- Cabbage 150g
- Cucumber 1 pc
- Carrot 1/3 pc
- Bean sprouts 200g
- Salt 1/3 Tbsp
- Perilla leaves 3 pcs
- Cooking oil 1 Tbsp
Cooking Instructions
Step 1
First, prepare the spicy and sweet sauce for the jjolmyeon! (Refer to recipe ‘@7003860’ for the best jjolmyeon sauce.) Start by boiling water for the bean sprouts. Add 1/3 Tbsp of salt to the water. Rinse the bean sprouts thoroughly and set them aside.
Step 2
While the water is boiling, let’s prepare the fresh vegetables. Wash the cucumber, carrot, perilla leaves, and cabbage. Slice them thinly into julienne strips. Thinly sliced vegetables absorb the sauce better and provide a pleasant texture.
Step 3
Once the water is boiling vigorously, add the rinsed bean sprouts and blanch them for about 5 minutes. Be careful not to overcook them, as they can become mushy.
Step 4
After blanching, drain the bean sprouts and rinse them immediately under cold running water several times. This helps to cool them down quickly and maintain their crispiness. Drain them well using a colander.
Step 5
Now, it’s time to cook the jjolmyeon noodles! Bring a pot of water to a boil for the noodles. To separate the noodles, hold the bundle of jjolmyeon with one hand and press down on the end with your palm, then twist and separate. This helps prevent them from sticking together.
Step 6
Prepare the separated jjolmyeon noodles. It’s best to separate them just before cooking, as they can become sticky if left for too long.
Step 7
When the water is boiling again, add the jjolmyeon noodles and 1 Tbsp of cooking oil. The oil helps prevent the noodles from sticking together and makes them chewier. Cook for about 4 minutes. (Note: Cooking times may vary depending on the brand of jjolmyeon, so check the package instructions.)
Step 8
Once the jjolmyeon is cooked, drain it and rinse immediately under cold water several times. This removes excess starch and cools the noodles, giving them their signature chewy texture. Drain them thoroughly using a colander.
Step 9
Arrange the cooked jjolmyeon noodles beautifully in a serving bowl. Top with the prepared vegetables and bean sprouts, and generously drizzle with the spicy and sweet jjolmyeon sauce you made earlier. Your simple and delicious jjolmyeon is ready!
