Spicy and Sweet Cheesy Dakgalbi Tteokbokki
Quick and Delicious Cheesy Dakgalbi Tteokbokki with Leftover Dakgalbi – Perfect for a Late-Night Snack!
I made tteokbokki using leftover dakgalbi marinade and chewy rice cakes. Adding a generous cheese topping made it incredibly delicious!
Main Ingredients- Marinated Dakgalbi (leftovers) 500g
- Tteokbokki Rice Cakes (tteok) 2 handfuls (approx. 200-250g)
- Shredded Pizza Cheese 1 handful (approx. 100g)
Seasoning & Others- Sugar 1 tsp (adjust to taste)
- Water 1 cup (200ml)
- Sugar 1 tsp (adjust to taste)
- Water 1 cup (200ml)
Cooking Instructions
Step 1
We’re going to make a quick and easy tteokbokki using leftover marinated dakgalbi and rice cakes. Place all the leftover dakgalbi into a wide pan (gungjung-pan). It’s helpful to cut the dakgalbi into bite-sized pieces using scissors or tongs before cooking.
Step 2
Pour 1 cup (200ml) of water into the pan to help dissolve the marinade. Next, add the tteokbokki rice cakes for a delightfully chewy texture. If you’d like it a bit sweeter, especially for kids, you can add an extra teaspoon of sugar. Add your prepared rice cakes to the pan.
Step 3
Stir-fry the mixture over medium heat until the rice cakes are soft and chewy. It’s important to stir occasionally to prevent the rice cakes from sticking to the bottom of the pan. If you have vegetables like green onions, onions, or perilla leaves, feel free to chop them and add them at this stage for a more flavorful and colorful dakgalbi tteokbokki.
Step 4
Once the rice cakes are soft and the dakgalbi is cooked through, sprinkle your desired amount of shredded pizza cheese evenly over the top. Let it cook undisturbed for about 2-3 minutes until the cheese is melted and gooey. If you’re using a generous amount of cheese, covering the pan with a lid will help it melt faster and more evenly.
Step 5
And there you have it! The combination of leftover dakgalbi, chewy rice cakes, and plenty of melted cheese creates an absolutely irresistible dish. This spicy and sweet dakgalbi tteokbokki is perfect as a satisfying snack or late-night meal for kids, and for adults, it’s an excellent companion to a cold beer or soju.
