I absolutely love rice bowls because they’re so easy to mix and eat! I’ve made a cabbage rice bowl that’s not only easy to digest but also incredibly tasty, even without meat. This is a fantastic diet recipe that helps you use up a lot of cabbage.

Main Ingredients

  • 5 Tbsp Olive Oil
  • 1/4 Cabbage (approx. 200g)
  • 1/2 Green Onion (mostly the white part)
  • 1/2 package Enoki Mushrooms (approx. 50g)

Spicy & Sweet Seasoning

  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Oyster Sauce
  • 1 Tbsp Stevia (or 1/2 Tbsp Sugar)

Cooking Instructions

Step 1

First, wash and prepare the 1/4 cabbage. Remove the core and slice it lengthwise into strips about 7mm thick. This thickness gives a wonderful texture when stir-fried.

Wash the half green onion and finely chop it. Using both the white and green parts will add a lovely aroma.

Trim the base of the half package of enoki mushrooms with a knife. Then, cut the mushrooms into 2cm lengths. Cutting them too long can make stir-frying difficult.

Now, let’s start stir-frying! Heat a pan over medium heat for about 1 minute, then add 5 tablespoons of olive oil. Add all the prepared shredded cabbage and chopped green onions to the pan.

Continue to cook over medium heat for about 3 minutes, or until the cabbage starts to wilt. The cabbage will release some moisture and become tender.

Once the cabbage is tender, reduce the heat to low. Add 3 tablespoons of gochugaru (Korean chili flakes) to bring in the spicy flavor. Be careful not to burn the chili flakes by cooking on high heat initially.

Next, add 2 tablespoons of oyster sauce for that savory umami depth. Oyster sauce is a secret ingredient that really enhances the overall flavor of the dish.

Add 1 tablespoon of stevia for sweetness. Stevia is a great low-calorie option for those on a diet. (You can substitute with 1/2 tablespoon of sugar if you prefer.)

Now, increase the heat to medium-low. Stir everything together with a spatula, ensuring the seasonings are evenly distributed, and cook for about 2 minutes. It’s important to keep stirring to prevent burning.

Finally, add the prepared enoki mushrooms. Stir-fry for just about 1 more minute, until the mushrooms are slightly wilted. Avoid overcooking, as they can release too much water.

Serve generously over warm rice. For an extra touch, top with a fried egg if desired! This makes a delicious and satisfying spicy and sweet cabbage rice bowl. You can also sprinkle with seaweed flakes or sesame seeds.
