Main Ingredients- 700g Radish (choose large, firm ones)
- 500ml Anchovy Broth (or use kelp broth or water if unavailable)
- 2/3 stalk Green Onion

Step 1
Start by preparing 700g of radish. Wash it thoroughly under running water, peel off the outer skin, and then cut it into thick, half-moon shapes or bite-sized pieces. We’ll arrange these nicely in the pot.
Step 2
The key to delicious braised radish! Let’s make the seasoning mixture. In a bowl, combine 4 Tbsp red pepper flakes, 6 Tbsp soy sauce, 1 Tbsp minced garlic, 2 Tbsp mirin, and 2 Tbsp sugar. Mix well until everything is evenly incorporated. You can adjust the sugar slightly depending on the radish’s natural sweetness and your preference.
Step 3
In a wide, heavy-bottomed pot, arrange the prepared radish pieces in a single layer without overlapping. This helps the seasoning penetrate evenly.
Step 4
Pour the prepared seasoning mixture evenly over the radish pieces. Make sure to get the seasoning between the radish slices.

Add 500ml of rich anchovy broth to the pot. If you don’t have anchovy broth, kelp broth, rice water, or plain water will also work. Turn the heat to high and bring it to a boil. Skim off any foam or impurities that rise to the surface as it boils for a cleaner broth.

Once the broth is boiling vigorously, reduce the heat to low. Cover the pot with a lid and let it simmer gently for at least 30 minutes, or until the radish is tender and has absorbed the flavors. Check occasionally to prevent sticking.
Step 7
When the radish is tender and the liquid has reduced by about half, add the diagonally sliced green onion (2/3 stalk). Continue to simmer for another 5-10 minutes until the sauce becomes slightly thicker and the green onion has softened and imparted its aroma.
Step 8
Finally, stir in 2 Tbsp of sesame oil for a nutty aroma and a pinch of black pepper. Turn off the heat. Adding the sesame oil at the end preserves its fragrance.
