Spicy and Sweet Braised Potatoes with Ham using Seasonal Potatoes
This dish features fluffy potatoes, which are especially delicious this season, braised in a savory and spicy sauce with ham. It’s a fantastic side dish or a delightful snack for kids. The combination of the unique braised flavor, tender potatoes, and chewy ham is truly exceptional.
Main Ingredients- 2 medium potatoes
- 1 pack of Spam or your favorite ham (approx. 200g)
- 1 medium onion
- 1 Tbsp minced garlic
- A pinch of sesame seeds (for garnish)
Spicy and Sweet Braising Sauce- 3 Tbsp soy sauce
- 200ml water (approx. 1 cup)
- 1 Tbsp gochugaru (Korean chili powder, adjust to spice preference)
- 1 tsp oyster sauce
- 1 Tbsp sugar
- 2 Tbsp oligosaccharide or corn syrup
- 1 Tbsp sesame oil
- 3 Tbsp soy sauce
- 200ml water (approx. 1 cup)
- 1 Tbsp gochugaru (Korean chili powder, adjust to spice preference)
- 1 tsp oyster sauce
- 1 Tbsp sugar
- 2 Tbsp oligosaccharide or corn syrup
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Let’s start making the appetizingly spicy and sweet braised potatoes with ham!
Step 2
First, wash the potatoes thoroughly and cut them into thick, 2cm pieces. Soak the cut potatoes in cold water for about 10 minutes to remove excess starch; this will make the braised dish cleaner and tastier. Drain the potatoes well using a colander.
Step 3
Heat 2 tablespoons of cooking oil in a deep frying pan or pot over medium heat. Add the prepared potatoes and sauté until their surface becomes slightly translucent and the edges turn lightly golden brown. This step helps the potatoes maintain their shape and absorb the sauce better.
Step 4
Pour 200ml of water (about 1 cup) into the pan with the sautéed potatoes. Add 3 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of minced garlic. Bring to a boil over high heat, then reduce to medium-low heat. Cover and let it simmer until the potatoes are cooked and the sauce has reduced to a thick glaze. Stir occasionally to prevent the sauce from burning.
Step 5
While the potatoes are simmering, thinly slice the onion and dice the ham into pieces similar in size to the potatoes, or into bite-sized pieces.

Once the potatoes are nearly tender and the sauce has thickened, add the sliced onion and diced ham to the pan. Stir gently to combine the ingredients with the sauce and sauté for a short while. The sauce might become a bit thinner due to the moisture released from the ham and onion, so you can continue to simmer it a bit longer if needed.

Finally, add 1 tablespoon of gochugaru for a spicy kick. Before turning off the heat, drizzle in 1 tablespoon of sesame oil and sprinkle with a pinch of sesame seeds for a glossy finish, then toss gently to combine. Adding sesame oil at the end preserves its fragrant aroma.
