Spicy and Sweet Braised Pork Ribs
Spicy & Sweet Pork Rib Stew for a Great Meal
The perfect dish when you’re not feeling hungry or want a hearty side dish with your rice. Also an excellent appetizer that will make you crave some soju! This recipe is for a flavorful and satisfying braised pork rib stew.

Cooking Instructions
Step 1
Before you start cooking, prepare all your ingredients by washing and chopping them. Soak the pork ribs in cold water for about 30 minutes to remove any blood. Peel and cut the potatoes into large chunks. Chop the onion into large pieces and slice the green onion diagonally.
Step 2
Submerge the pork ribs in cold running water for approximately 30 minutes to bleed out any excess blood. Thoroughly removing the blood is key to achieving a clean taste without any gamey odors.

Chop the onion into large pieces and slice the green onion diagonally. If you’d like a spicier kick, feel free to thinly slice 2-3 Korean green chili peppers (cheongyang peppers) to add to the stew.
Step 4
In a bowl, combine 7 Tbsp soy sauce, 2 Tbsp minced garlic, 4 Tbsp gochugaru (Korean chili flakes), 4 Tbsp gochujang (Korean chili paste), 1 Tbsp oligodang (corn syrup), 2 Tbsp sugar, 2 Tbsp sesame oil, and 1/2 Tbsp black pepper. Whisk everything together until the sauce is well combined.
Step 5
Bring a pot of water to a boil and add the pork ribs. Blanch them for about 5 minutes. This parboiling step helps to remove impurities and any unwanted odors from the pork ribs.
Step 6
Drain the blanched pork ribs and place them in a colander. Rinse them gently under cold running water to wash away any sticky residue. This step ensures the ribs absorb the sauce better and result in a cleaner finished dish.
Step 7
Transfer the parboiled pork ribs to a wide pot. Pour all of the prepared sauce over the ribs. Add the coarsely chopped onion, green onion, and the optional Korean green chili peppers. Add enough water to almost completely cover the pork ribs.

Bring the pot to a rolling boil over high heat. Once boiling, reduce the heat to medium, cover the pot, and let it simmer for 20 minutes. This allows the pork ribs to tenderize and absorb the flavors of the sauce.
Step 9
After 20 minutes, remove the lid and add the chunked potatoes. Continue to simmer for another 10 minutes, or until the potatoes are tender. If the sauce seems too reduced, you can add a little more water.

Finally, add the sliced green onions and onions. Cook for an additional 5 to 10 minutes, allowing the vegetables to soften and all the ingredients to meld together beautifully.

Once the sauce has thickened slightly and all the ingredients are infused with the delicious spicy and sweet flavor, your braised pork ribs are ready! Serve hot with a side of steamed rice and enjoy this delightful meal.
