Spicy and Sweet Braised Korean Pollack (Kodari Jorim)

Kodari (frozen pollack) is gaining popularity for its chewy texture and low fat content. It’s also said to be good for liver health, skin, and is a great diet food. Not only is it delicious, but Kodari also has a warming property, making it beneficial for those with cold body constitutions. Create a delicious dish with this healthy ingredient!

Main Ingredients

  • 3 pieces of prepared Kodari (frozen pollack)
  • 1 cup water
  • 1/3 medium radish (about 200g)
  • 1 onion (medium size)
  • 1 stalk green onion
  • 2 green chili peppers

Spicy & Sweet Sauce

  • 6 Tbsp soy sauce
  • 2 Tbsp minced garlic
  • 3 Tbsp red chili flakes (gochugaru)
  • 3 Tbsp cooking wine (mirin or similar)
  • 1 Tbsp corn syrup (oligosaccharide)
  • 1 Tbsp ginger syrup (or 1 Tbsp ginger juice + 1 Tbsp corn syrup)
  • 1 Tbsp sesame oil
  • 1 tsp black pepper

Cooking Instructions

First, prepare the Kodari. If using frozen Kodari, thaw it completely in the refrigerator. To prevent any fishy smell, trim off the fins and rinse the fish thoroughly under cold running water. Pat dry.

Now, let’s prepare the vegetables. Finely mince the garlic. Slice the radish into about 1cm thick pieces. Slice the onion thinly. Cut the green onion and green chilies diagonally.

Let’s make the key sauce for this delicious Kodari Jorim! In a bowl, combine 6 Tbsp soy sauce, 2 Tbsp minced garlic, 3 Tbsp red chili flakes, 3 Tbsp cooking wine, 1 Tbsp corn syrup, 1 Tbsp ginger syrup (or substitute with 1 Tbsp ginger juice and 1 Tbsp corn syrup), 1 Tbsp sesame oil, and a pinch of black pepper. Mix well to create the sauce.

In a braising pot or deep pan, place the sliced radish at the bottom. Layer the sliced onions on top of the radish, and then arrange the prepared Kodari pieces attractively over the onions. This layering helps prevent the radish from burning and ensures the fish absorbs the flavors well.

Spoon the prepared sauce evenly over the Kodari. It’s important to coat the fish thoroughly with the sauce for maximum flavor. Finally, carefully pour 1 cup of water around the edges of the pot.

Cover the pot and simmer over medium heat for 20 minutes. Once it starts boiling, reduce the heat slightly. As the sauce thickens, frequently spoon the sauce over the Kodari to ensure it cooks evenly and absorbs flavor. Continue cooking until the radish becomes translucent.

After simmering for about 20 minutes, add the prepared green onions and green chilies attractively on top. Cover the pot again and continue to simmer for another 10 minutes. This allows the ingredients to cook through and the flavors to meld beautifully.
