This is a wonderfully savory and slightly spicy braised king oyster mushroom dish. It’s a perfect side dish for any meal, offering a delightful chewy texture and a rich umami flavor. Cooking Instructions
Step 1
First, wash the king oyster mushrooms thoroughly. Slice them into thick rounds, about 1 to 2 cm thick, including the stems. Slicing them too thinly might cause them to break apart during cooking, so aim for a substantial thickness to maintain their chewy texture.
Step 2
Trim the stem off the Korean chili pepper and slice it diagonally into thin pieces. If you prefer it spicier, leave the seeds in; if you want a milder flavor, you can remove the seeds.
Step 3
Now, let’s prepare the delicious braising sauce. In a small bowl, combine 1 Tbsp minced garlic, 1 Tbsp coarse gochugaru, 1 Tbsp oyster sauce, 1 Tbsp oligodang, 1 Tbsp mirin, 3 Tbsp water, and a pinch of black pepper. Stir well until all ingredients are fully incorporated to create the sauce.
Step 4
Heat a pan over medium-low heat and add a little cooking oil. Place the sliced king oyster mushrooms in the pan and lightly pan-fry them until they become golden brown on both sides. This step helps to remove some of the moisture from the mushrooms, resulting in a chewier texture.
Step 5
Once the mushrooms are nicely browned, add the sliced Korean chili peppers and the prepared sauce to the pan. Stir everything together over medium-low heat, allowing the mushrooms to absorb the flavors as the sauce thickens. Continue to stir occasionally to prevent sticking, and cook for another 2-3 minutes until the sauce has reduced and coated the mushrooms beautifully.
