How to Make Delicious Spicy and Sweet Braised Chicken Noodles
I absolutely love ramen and chicken, so I came up with this recipe by thinking about new ways to enjoy them! This dish combines chewy chicken and plenty of vegetables with ramen, making it perfect for a meal or even as a side dish with drinks.
Main Ingredients- 400g chicken, cut for stir-frying
- 5 large cabbage leaves
- 1/2 onion
- 1/2 carrot
- 1/3 red bell pepper
- 1/2 king oyster mushroom
- 2 cloves garlic
- 2/4 stalk green onion (mainly the white part)
- 2 packs ramen noodles (your choice)
- 2 Tbsp mirin (rice wine)
- 1 tsp curry powder
- 1 bay leaf
Sauce- 2 Tbsp soy sauce
- 1.5 Tbsp sugar
- 0.5 tsp sesame oil
- 0.5 tsp black pepper
- 1 tsp oyster sauce
- 1 tsp minced garlic
- 2 Tbsp soy sauce
- 1.5 Tbsp sugar

Cooking Instructions
Step 1
Before you begin cooking, gather all the necessary ingredients. Prepare the chicken and vegetables by washing and chopping them, then arranging them attractively in bowls. This makes the cooking process much smoother.
Step 2
Wash the chicken thoroughly and separate the meat from the bones to help tenderize it. Rinse it well under running water.
Step 3
Cut the chicken into bite-sized pieces (about 3-4 cm). Place the chicken in a bowl, add the bay leaf, mirin, and curry powder. Marinate by gently massaging the ingredients into the chicken for about 10 minutes. The curry powder and bay leaf are excellent for eliminating any gamey odor from the chicken.
Step 4
While the water for the ramen is coming to a boil, prepare the sauce in a separate bowl. Combine the soy sauce, sugar, sesame oil, black pepper, oyster sauce, and minced garlic. Mix well. Having the sauce ready beforehand makes seasoning the dish much easier.
Step 5
Boil water for two servings of ramen. Add the ramen noodles and the included dried vegetable packet. Cook until the noodles are done, then quickly rinse them under cold water to remove excess starch. Set aside to prevent them from becoming mushy. (You can also add the dried vegetable packet during the stir-frying stage.)
Step 6
Heat a deep pan or wok over medium heat. Add a generous amount of cooking oil. Add the sliced green onions and stir-fry for about 1-2 minutes until fragrant, creating green onion oil. Once the aroma of green onion is released, add the thinly sliced garlic and stir-fry for about 30 more seconds, being careful not to burn the garlic, to enhance the flavor.
Step 7
Increase the heat to medium-high. Add the marinated chicken and stir-fry until the surface is lightly browned. When the chicken is almost cooked through, add the prepared onion, cabbage, carrot, bell pepper, and king oyster mushroom. Stir-fry together for about 3-4 minutes, or until the vegetables are slightly tender. Finally, pour in all the prepared sauce and stir everything together for another 1-2 minutes until well coated and heated through. Serve immediately.
