When the weather is hot and humid like during the monsoon season, your appetite tends to disappear. To combat this, I made a spicy and delicious Bibim Guksu! Now my appetite is back with a vengeance, which is almost a problem! This recipe will surely awaken your taste buds and make you crave more.

Main Ingredients

  • 1 serving of somyeon (thin wheat noodles, approx. 100-120g)
  • 1/2 cucumber
  • 5 perilla leaves

Cooking Instructions

Step 1

First, prepare the aromatic perilla leaves. Wash them thoroughly, pat dry, and then roll them lengthwise. Slice them into thin strips. To achieve the best texture, hold them loosely as you slice and gently separate the strands so they don’t clump together.

Next, julienne the cucumber into similar thin strips. Adding cucumber provides a refreshing crunch that complements the chewy noodles perfectly.

For an extra layer of flavor, you can finely chop some well-fermented kimchi and add it to the mix. The tangy and spicy notes from the kimchi will elevate the overall taste of your Bibim Guksu. (Optional)

Now, let’s make the delicious sauce. In a bowl, combine 1 Tbsp gochujang, 1/2 Tbsp sugar, 1 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp sesame oil, and 1/2 Tbsp sesame seeds. Stir everything together until well combined. Feel free to adjust the sugar and gochugaru to your preferred level of sweetness and spice.

Bring a pot of water to a rolling boil and cook 1 serving of somyeon noodles. Stir occasionally to prevent sticking, cooking for the time indicated on the package or until the noodles are perfectly tender. Once cooked, drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Drain well. Rinsing the noodles in cold water makes them delightfully chewy and firm.

In a large bowl, combine the drained noodles with the prepared sauce. Mix everything thoroughly, ensuring the sauce coats every strand of noodle. Finally, artfully arrange the julienned cucumber, perilla leaves, and optional kimchi on top. Your vibrant, spicy, and sweet Bibim Guksu is ready to be enjoyed!
