Introducing a Korean-style Mazesoba recipe where you mix savory soybean paste and spicy-sweet seasoned pork with noodles. It’s a perfect dish for when you’re craving something flavorful and satisfying!
Main Ingredients- 300g ground pork
- 1/2 stalk of green onion
- 1 Tbsp sesame seeds
- 2 Tbsp shredded seaweed (gim)
- 1 Tbsp sesame oil
- Somen noodles (for 1 serving)
Pork Seasoning- 1 Tbsp red pepper powder (gochugaru)
- 1 Tbsp red pepper paste (gochujang)
- 1/2 Tbsp soybean paste (doenjang)
- 1 Tbsp sugar
- 1 Tbsp sesame oil

Cooking Instructions
Step 1
First, prepare the seasoning sauce for your delicious mixed noodles. In a bowl, combine 1 Tbsp gochugaru, 1 Tbsp gochujang, 1/2 Tbsp doenjang, 2 Tbsp soy sauce, 1 Tbsp sesame oil, and 1 Tbsp sugar. Mix well until no lumps remain and the sugar is dissolved.
Step 2
Finely chop the green onion. To avoid crying while chopping, you can soak the chopped onion in water briefly or wet your knife before cutting. This will help release less irritants.

Lightly crush the sesame seeds for a nutty aroma and prepare the shredded seaweed. Having these prepped will save you time during cooking.

Heat a frying pan with a little cooking oil over medium-low heat. Add the chopped green onion and stir-fry slowly to release its fragrance. Cook until the onion turns slightly brown and a sweet aroma emerges. This step deepens the onion’s flavor.

Once the green onion is fragrant, add the ground pork. Break it apart with chopsticks or a spatula and stir-fry until it’s well browned. Cooking the pork thoroughly helps render out excess fat.

In a separate pot, bring plenty of water to a boil. Add the somen noodles and cook until al dente. Drain the noodles and rinse them under cold water to remove excess starch. Transfer to a bowl, add 1 Tbsp sesame oil and the crushed sesame seeds, and toss lightly. It’s best to mix the noodles with the toppings immediately to prevent them from becoming soggy.

Top the sesame oil-tossed somen noodles generously with the seasoned stir-fried pork. Sprinkle with the prepared shredded seaweed for an extra layer of flavor and texture.
