Main Ingredients

  • 200g Mill-tteok (soft rice cakes for tteokbokki)
  • 180g Jjolmyeon noodles (fresh or dried)
  • 1 handful Bean sprouts (fresh and crisp)
  • 1 stalk Scallion (sliced diagonally)
  • 6-7 Frozen shrimp
  • 1 Tbsp Cooking wine (to remove shrimp odor)

Spicy and Sweet Sauce

  • 1 Tbsp Soy sauce (for umami)
  • 2 Tbsp Sugar (for sweetness)
  • 2 Tbsp Oligosaccharide (for gloss and sweetness)
  • 1 Tbsp Fine Gochugaru (Korean chili powder, for color and heat)
  • 3 Tbsp Gochujang (Korean chili paste, the core of spiciness)
  • 1/2 Tbsp Curry powder (adds an exotic touch and boosts umami!)
  • 1 Tbsp Minced garlic (for a pungent aroma)

Cooking Instructions

Step 1

First, let’s prepare all the ingredients needed to make our delicious Bean Sprout Jjolbokki. Rinse the rice cakes under water and wash the bean sprouts, removing any undesirable parts.

Now, let’s create the sauce that will make this Jjolbokki truly special. In a bowl, combine 1 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp oligosaccharide, 1 Tbsp fine gochugaru, 3 Tbsp gochujang, 1 Tbsp minced garlic, and 1/2 Tbsp curry powder. Mix well until there are no lumps to form a flavorful sauce.

Thaw the frozen shrimp by placing them in cool water. Once thawed, bring a pot of water to a boil, add 1 Tbsp of cooking wine, and blanch the shrimp until they turn a bright red color. If the shrimp are large, slice them in half lengthwise so they absorb the sauce better.

Jjolmyeon noodles can clump together, so gently separate them strand by strand. Cook the noodles in boiling water according to package instructions or until they reach your desired chewiness. After cooking, rinse them under cold water to remove excess starch; this prevents them from sticking and keeps them delightfully springy.

Slice the scallion diagonally into bite-sized pieces. This cut makes them cook evenly and adds a beautiful color to the finished dish.

To keep the bean sprouts crisp, we’ll quickly blanch them. Add the washed bean sprouts to boiling water and cook for just a moment until they slightly wilt. Be careful not to overcook them, or they will become mushy.

It’s time to start cooking! Pour 500ml of water into a pot and dissolve the prepared sauce. Once the sauce mixture begins to boil, add the mill-tteok (rice cakes) that you’ve rinsed.

As the sauce starts to simmer, add the diagonally sliced scallions and reduce the heat to medium. Continue to cook until the sauce thickens and the rice cakes are glossy. Stir occasionally to prevent sticking to the bottom of the pot.

When the rice cakes are tender and the sauce has reduced and turned a vibrant red, add the blanched shrimp. Stir them in and let them cook, adding their delicious flavor to the dish.

Finally, add the cooked jjolmyeon noodles to the pot. Stir everything together so the noodles, rice cakes, and shrimp are evenly coated with the sauce. Let it simmer for a short while longer. Taste and add a pinch of salt if needed to adjust the seasoning (though the sauce is usually sufficient on its own, adjust to your preference).

Transfer the finished Bean Sprout Jjolbokki to a serving bowl. Generously top with the blanched bean sprouts for an enhanced visual appeal and texture!
