Aged Kimchi Rice Rolls: A Delicious Bento Box Idea Inspired by Kimbap
Let’s make flavorful kimchi rice rolls with aged kimchi! This recipe offers a delightful combination of tangy kimchi and savory tuna.
Ingredients- 1 bowl of cooked rice
- 1 can (approx. 150g) of tuna
- 2 Cheongyang peppers (Korean chili peppers)
- 1/2 tsp sesame oil
- 2 Tbsp mayonnaise
- 5 sheets of aged kimchi (well-fermented kimchi)
- A pinch of toasted sesame seeds
- 1 pinch of sugar (optional)
Cooking Instructions
Step 1
We’re going to create a unique rice roll that harmonizes the deep flavor of aged kimchi with the savory richness of tuna. Rolling them up like a cake makes them perfect for a special bento box.
Step 2
Gently rinse the aged kimchi under running water to slightly reduce its sourness. Squeeze out excess water thoroughly, as if brushing off the filling. If the kimchi sheets are too large, you can cut them in half. Finely chop the Cheongyang peppers (removing seeds), and drain the tuna well.
Step 3
In a bowl, mix the warm cooked rice with sesame oil and toasted sesame seeds until well combined. Since the aged kimchi is already flavorful, no additional seasoning is needed for the rice. For best results, let the rice cool slightly before mixing so the sesame oil aroma doesn’t dissipate.
Step 4
In a separate bowl, combine the drained tuna with 2 tablespoons of mayonnaise. Mix well, then add the chopped Cheongyang peppers and stir to create the tuna filling. You can substitute red chili peppers for Cheongyang peppers for a more vibrant color.

Spread a thin layer of the seasoned rice over one sheet of aged kimchi. Then, place a portion of the tuna filling on top of the rice. Avoid making the rice layer too thick, as it can make rolling difficult.
Step 6
Starting from one end of the kimchi, carefully roll it up tightly, ensuring the rice and tuna filling don’t spill out. Be gentle to prevent the kimchi from tearing, and aim for an even roll.
Step 7
Once rolled, slice the kimchi rolls into bite-sized pieces (about 1.5-2 cm thick). Arrange them attractively on a plate to complete your delicious aged kimchi and tuna rolls. Sprinkle with extra toasted sesame seeds for garnish if desired.
