- 200ml Water (broth or plain water)
- 2 Tbsp Gochugaru (Korean chili flakes, adjustable for spice level)
- 1 Tbsp Mirin or Cooking Sake (removes gamey odors)
- 2 Tbsp Soy Sauce (for umami)
- 1 Tbsp Corn Syrup (for gloss and sweetness)
- 1 Tbsp Sugar (for added sweetness)
- 1 Tbsp Minced Garlic (enhances flavor)
- 200ml Water (broth or plain water)
Cooking Instructions
Step 1
Carefully remove the silken tofu from its packaging, as it can easily break apart during cooking. Slice it into pieces about 1.5cm thick. Slicing it into substantial pieces will help maintain its soft texture after cooking.
Step 2
Slice the onion into strips about 0.5cm thick. Avoid slicing them too thinly. Sliced onions release sweetness as they cook and help create a flavorful, slightly soupy consistency for the braise.
Step 3
Cut the scallion diagonally into large pieces. The fresh aroma of the scallion will further enrich the taste of the braised tofu.
Step 4
In a small bowl, combine gochugaru, mirin (or cooking sake), soy sauce, corn syrup, sugar, minced garlic, and 200ml of water. Stir well with a spoon until all the ingredients are thoroughly mixed and the sugar and corn syrup are dissolved.
Step 5
Now, it’s time to layer the ingredients in the pot. Start by placing the sliced onions at the bottom, followed by the scallions, and finally, carefully arrange the sliced silken tofu on top. Layering the ingredients ensures the sauce permeates evenly.
Step 6
Pour the prepared flavorful sauce evenly over the silken tofu, starting from the edges of the pot. Make sure the sauce seeps into the gaps between the tofu pieces.
Step 7
Place the pot over medium heat and simmer for about 10-15 minutes, or until the sauce has reduced by about half. Covering the pot while simmering and basting occasionally with the sauce will enhance the flavor. The dish is ready when the sauce is reduced to about half its original volume!
Step 8
Finally, sprinkle toasted sesame seeds over the warm braised silken tofu for a nutty aroma and an appealing presentation. It’s ready to be served as a side dish, or you can add ingredients like Cheongyang chili peppers for an extra spicy kick, according to your preference.
