This is a quick and simple spicy abalone stir-fry featuring Cheongyang peppers. The onions are crisp, and the abalone is both spicy and chewy. It’s perfect as a side dish for lunchboxes, a staple for everyday meals, a great accompaniment to drinks, or an impressive dish for entertaining guests. Ingredients

  • 4 fresh abalones
  • 3 Cheongyang peppers
  • 1/4 onion
  • 1/2 green onion stalk
  • 5 cloves garlic
  • 1 Tbsp cooking oil
  • A pinch of sliced almonds

Seasoning

  • 1 Tbsp soy sauce
  • 1 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp plum extract (maesilcheong)
  • 1 tsp anchovy sauce (or fish sauce)
  • A pinch of black pepper
  • 1 tsp sesame oil

Cooking Instructions

Step 1

Clean the abalones by scrubbing the shells with a brush. Separate the shells and carefully remove the innards before cooking. (The abalone innards can be reserved for delicious fried rice!)

Carefully cut out and remove the hard teeth from the inside of the abalone. This part can be tough to chew, so it’s best to remove it.

Slice the cleaned abalone into 3-4 bite-sized pieces. Slicing them not too thinly will help maintain a chewy texture when cooked.

Finely chop the Cheongyang peppers for spiciness and slice the onion into thin strips for a crisp texture. Adjust the amount of Cheongyang peppers to your preferred level of heat.

Slice the green onion diagonally and prepare minced garlic to add aromatic flavor to the dish.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the chopped green onion, onion, garlic, and Cheongyang peppers, and stir-fry until fragrant, infusing the oil with their aromas.

Once the vegetables are slightly softened, add all the seasoning ingredients except for the sesame oil (soy sauce, cooking wine, plum extract, anchovy sauce, black pepper). Stir-fry together for about 3-4 minutes until the flavors meld. Be mindful of the heat to prevent the seasonings from burning.

Now it’s time to add the chewy abalone. Add the prepared abalone to the pan with the seasoned vegetables and toss to coat evenly.

Continue to stir-fry for about 2-3 minutes until the abalone is cooked through. Abalone can become tough if overcooked, so cook it just until done. Just before turning off the heat, drizzle in the sesame oil for a nutty aroma and give it a final mix. It’s ready!
