Ingredients- 1 bowl of well-fermented kimchi (aged kimchi is best)
- 1 can of tuna (drained, but reserve some oil if preferred)
- 1 handful of green onions (cut into large pieces)
- 2 Korean red chili peppers (optional, finely chopped)
- 300ml water (about 1.5 cups)
- 2 tbsp cooking oil
- 3 tbsp kimchi brine
- 1 tbsp red chili powder (gochugaru)
Cooking Instructions
Step 1
Prepare all the ingredients for a delicious Tuna Kimchi Stew! Chop the aged kimchi into bite-sized pieces. Slice the green onions and Korean red chili peppers.
Step 2
Heat 2 tablespoons of cooking oil in a pot over medium heat. Add the chopped kimchi and stir-fry for about 5 minutes until the kimchi becomes tender and slightly translucent. Stir-frying the kimchi deeply enhances its savory flavor.
Step 3
Once the kimchi turns a appetizing orange hue, add 1 can of tuna. Don’t discard all the oil from the tuna can; adding some of the oil along with the tuna will enrich the stew’s broth.

Now, add 3 tablespoons of kimchi brine – this is a key ingredient for flavor! Pour in 300ml of water to adjust the broth consistency. Bring the stew to a boil over high heat.

For an extra kick and richer color, sprinkle in 1 tablespoon of red chili powder (gochugaru). This will make the stew look even more appealing.

I like it extra spicy, so I’ve added 2 finely chopped Korean red chili peppers. If you enjoy spicy food, add them in! If you prefer a milder stew, feel free to skip this step.
