Spicy and Savory Stir-fried Zucchini to Boost Your Appetite
Let’s stir-fry savory zucchini with a hint of spice to awaken your taste buds! This dish is wonderfully fragrant and adds a delightful kick to any meal. ^0^
Main Ingredients- 1 medium zucchini
- 1/2 onion
- 2 Korean green chili peppers (cheongyang peppers)
Basic Seasoning- 2 Tbsp cooking oil
- 1 Tbsp minced garlic
- Generous amount of sesame seeds
Sauce Mixture- 2 Tbsp chopped green onion
- 3 Tbsp cooking wine (mirin)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp salted shrimp (saeujeot), drained of liquid
- 2 Tbsp cooking oil
- 1 Tbsp minced garlic
- Generous amount of sesame seeds

- 3 Tbsp cooking wine (mirin)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 tsp salted shrimp (saeujeot), drained of liquid
Cooking Instructions
Step 1
Prepare the ingredients to make a delicious stir-fried zucchini.
Step 2
Wash the zucchini and slice it into 0.5 cm thick half-moons or thick rounds. Slice the onion into similar thickness strips. Remove the stems from the Korean green chili peppers and slice them diagonally to add a spicy flavor. Finely chop the green onion to be used in the sauce.
Step 3
Heat a pan over medium heat. Add 2 Tbsp of cooking oil and 1 Tbsp of minced garlic. Stir-fry over low heat until fragrant, being careful not to burn the garlic. This step is crucial for developing a rich garlic aroma.
Step 4
Once the garlic is fragrant, add the sliced zucchini and onion to the pan. Stir-fry over medium heat until the zucchini becomes slightly translucent and the onion softens.
Step 5
While the zucchini and onion are stir-frying, prepare the sauce mixture in a small bowl: combine 2 Tbsp chopped green onion, 3 Tbsp cooking wine (mirin), 1 Tbsp gochugaru (Korean chili flakes), and 1 tsp salted shrimp (saeujeot). Mix them well. (For the salted shrimp, it’s best to drain the liquid and use only the solid shrimp to better control the saltiness.)
Step 6
When the zucchini and onion are tender and starting to soften, pour the prepared sauce mixture evenly over the ingredients in the pan. Add the sliced Korean green chili peppers as well.
Step 7
Stir everything together quickly to coat the ingredients with the sauce and continue to cook. The goal is to cook the zucchini until it’s tender but still has a slight crispness, avoiding it becoming too mushy. (Adjust the cooking time based on your preferred texture.)

Finally, sprinkle a generous amount of sesame seeds for added nutty flavor and give it one last quick stir. Your delicious spicy and savory stir-fried zucchini is now ready!
