Main Ingredients- 4 medium potatoes
- 1/2 block firm tofu
- 1 can (150g) tuna
- 1.5 hot chili peppers
- 1 cup kimchi (well-fermented)
Seasoning- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp doenjang (Korean soybean paste)
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 2 cups (400ml) water
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp doenjang (Korean soybean paste)
- 3 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp minced garlic
- 2 cups (400ml) water
Cooking Instructions
Step 1
First, prepare all your ingredients. Peel the potatoes and cut them into large, bite-sized cubes. Dice the tofu into approximately 1.5cm cubes. Open the canned tuna and drain off the oil thoroughly using a sieve. Finely mince the hot chili peppers. Chop the well-fermented kimchi into bite-sized pieces.
Step 2
In a wide, heavy-bottomed pot, place the large cubed potatoes at the bottom. The potatoes will absorb the flavors from the other ingredients and the broth as they cook, making them extra delicious.
Step 3
Arrange the diced tofu, drained tuna, and minced hot chili peppers attractively over the potatoes in the pot.
Step 4
Fill in the empty spaces in the pot with the chopped kimchi. The kimchi will add a wonderful depth of flavor and umami to the stew.
Step 5
Now, add all the prepared seasoning ingredients. Finally, pour in 2 cups (400ml) of water. Begin by bringing the stew to a boil over high heat.
Step 6
Once the stew starts to boil, gently stir to dissolve any clumps of gochujang and doenjang. Use a spatula to ensure all seasonings are evenly mixed into the broth, preventing them from sticking to the bottom of the pot.
Step 7
Cover the pot, reduce the heat to medium-low, and let it simmer until the potatoes are completely tender, about 15-20 minutes. Check the potatoes periodically. Continue simmering until the broth has slightly reduced and thickened to your desired consistency. Taste and adjust seasoning if needed, adding a little more soy sauce if desired. This delicious, not-too-salty Potato Tuna Stew is a hearty dish that will have you finishing your rice bowl in no time!
