Bought some pollack roe on sale at the market! Pollack roe is delicious on its own, but there are so many ways to enjoy it. Let’s make a flavorful side dish with this simple recipe that’s perfect with rice.
Ingredients- 100g fresh pollack roe
- 20g green onion or white part of leek
- 15g Korean chili pepper (e.g., Cheongyang pepper)
- 1.5 Tbsp sesame oil
- Sesame seeds, to taste
Cooking Instructions
Step 1
Gently rinse the fresh pollack roe under cold running water. Then, carefully slit the pollack roe lengthwise with the back of a knife. This makes it easier to separate the roe from the membrane.
Step 2
Using a spoon or the back of a knife, gently scrape the roe out from the membrane. Discard the membrane and place the soft roe into a bowl. If the roe is clumped together, gently break it apart with chopsticks.
Step 3
Prepare the green onion or the white part of the leek. You’ll need about 20g. Wash it thoroughly and mince it very finely. If the pieces are too large, they can affect the texture, so aim for the smallest pieces possible.
Step 4
Prepare the Korean chili pepper for a spicy kick. About 15g is needed. Remove the seeds and mince it very finely. If you like it spicier, you can leave the seeds in or adjust the amount of pepper. Mincing it finely will help it blend well into the salad.
Step 5
In a wide bowl, combine the prepared pollack roe, minced green onion (or leek), and minced chili pepper. Add 1.5 tablespoons of sesame oil for a rich, nutty aroma.
Step 6
Finally, just before serving, sprinkle a generous amount of sesame seeds over the mixture for added flavor and texture. Gently mix everything together with chopsticks or a spoon until well combined. Your delicious pollack roe salad is ready! Serve it over rice or enjoy it with fresh lettuce wraps.
