First, prepare the kimchi. Cut half of the half-head into smaller pieces. Gently squeeze out some juice and finely mince the well-fermented kimchi. Chopping it finely will help it integrate better into the fried rice.

Prepare about 3 slices of ham (approx. 1kg if using a large block). Slice them lengthwise, then dice them into bite-sized cubes. Note that the saltiness can vary depending on the type of ham you use.

Prepare the kimchi juice to enhance the flavor of the fried rice. You can collect it separately, or conveniently squeeze some out before chopping the kimchi. About one ladleful is sufficient.

Heat a deep pan or wok over medium heat and add 1 tablespoon of perilla oil. Once the oil is warm, add the minced kimchi and diced ham. Stir-fry them until the kimchi’s sourness mellows and the ham becomes lightly browned. This step is crucial for developing flavor.
