A comforting soup dish that’s a staple on any dining table. With just chicken and aged kimchi, you can simply add water and simmer, making it a frequent favorite. I made this braised chicken with aged kimchi for my husband who was craving chicken. This dish brings out the best of tender chicken and the tangy, robust flavor of well-fermented kimchi, creating a comforting and hearty meal that’s perfect for any occasion. It’s simple enough for a weeknight dinner but special enough for guests. Let’s get cooking!

Main Ingredients

  • 1/2 chicken (about 500g, cut into serving pieces)
  • 1/4 head of aged kimchi (well-fermented)
  • 3 cups water (approx. 600ml)
  • 1/2 stalk green onion
  • 1-2 Tbsp sesame oil

Cooking Instructions

Step 1

First, cut the aged kimchi into large halves so it fits comfortably in your pot. Rinse the chicken if desired, and pat it dry. Place the chicken and kimchi in a large pot or Dutch oven. Drizzle with 1-2 tablespoons of sesame oil. Sauté over medium heat for about 5-7 minutes, stirring occasionally, until the chicken is lightly browned and the kimchi begins to soften and release its aroma. This step helps to deepen the flavors and reduce the kimchi’s sourness.

Once the chicken and kimchi have been sautéed, add 3 cups of water (approximately 600ml) to the pot. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for about 20-25 minutes, or until the chicken is cooked through and tender. If the liquid reduces too much during simmering, you can add a little more water.

When the chicken is tender and the broth has slightly thickened, it’s time for the final touch. Slice the green onion diagonally. Add the sliced green onion to the pot during the last 3-5 minutes of cooking. This will infuse the braised chicken with a fresh, aromatic flavor. Continue to simmer until the green onion is slightly tender. Turn off the heat, and your delicious Kimchi Braised Chicken is ready to be served!
