Main Ingredients

  • 2 small cans of tuna
  • 1 onion
  • 1/2 green bell pepper
  • 1/2 carrot
  • 1 Tbsp olive oil

For Stir-frying Tuna

  • 1/2 Tbsp anchovy sauce (myeolchi aekjeot)
  • A pinch of black pepper

Gochuchamchi Seasoning

  • 1 Tbsp gochujang (generous scoop)
  • 1 Tbsp gochugaru (Korean chili powder)
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 2 Tbsp cooking wine (mirin or rice wine)

Let’s start by making the key Gochuchamchi sauce. In a bowl, add a generous scoop of gochujang. Then, add gochugaru, minced garlic, 2 Tbsp soy sauce, and 2 Tbsp cooking wine. Mix them well to create the sauce. The balance of sweet and spicy flavors is crucial.

Next, prepare the vegetables. Wash the onion, carrot, and green bell pepper thoroughly and pat them dry. Finely dice them. Dicing the vegetables small will help them meld well with the tuna and improve the texture.

It’s important to drain the oil from the tuna cans as much as possible. Press the tuna with your hands over a sieve to remove excess oil and moisture. This will make the tuna nice and flaky when stir-fried. Thoroughly completing this step is key to making delicious Gochuchamchi without greasiness.

Add the drained tuna to the frying pan.

Add 1/2 Tbsp anchovy sauce and about 10 twists of black pepper to the tuna. Stir-fry over medium-low heat for about 3-4 minutes, until the moisture from the tuna has evaporated. After stir-frying, the tuna will become delightfully flaky, making it hard to believe it came from a can.

Transfer the stir-fried tuna to a plate to cool slightly. Now, by stir-frying the vegetables and adding the sauce, your spicy Gochuchamchi will be complete.

Lightly wipe the pan used for the tuna with a paper towel. Add 1 Tbsp of olive oil and stir-fry the diced onion over medium-low heat until it becomes translucent. Cooking the onions until their natural sweetness is released is important.

Once the onion is translucent, add the diced carrot and green bell pepper. Stir-fry over medium heat for about 3 minutes. Cook until the vegetables are tender yet retain a slight crispness.

When the carrots and onions are nicely sautéed and translucent, add the stir-fried tuna and the prepared gochujang sauce.
