Spicy and Savory Fridge-Raiding Doenjang Jjigae
Whip Up a Simple Doenjang Jjigae with Ingredients from Your Fridge!
This recipe is for a quick, savory, and slightly spicy Doenjang Jjigae (Korean soybean paste stew) that uses up leftover ingredients in your refrigerator. It’s a perfect side dish that will make you want to eat more rice!
Stew Ingredients
- 650ml Anchovy-Kelp Broth
- 1 block Tofu
- 1/2 Onion
- 2 Cheongyang Peppers
- Green Onion, as needed
- A little Zucchini
- 1 pack Enoki Mushrooms
Seasoning Ingredients
- 2 Tbsp Store-bought Doenjang (soybean paste)
- 1 Tbsp Homemade Doenjang (soybean paste)
- 1 Tbsp Fish Sauce (e.g., Kkanari)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (red pepper flakes)
- 2 Tbsp Store-bought Doenjang (soybean paste)
- 1 Tbsp Homemade Doenjang (soybean paste)
- 1 Tbsp Fish Sauce (e.g., Kkanari)
- 1/2 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (red pepper flakes)
Cooking Instructions
Step 1
First, prepare the vegetables and tofu for the stew. Finely chop the green onion and Cheongyang peppers. Cut the tofu, onion, zucchini, and enoki mushrooms into bite-sized pieces. For the enoki mushrooms, trim off the root and gently separate the strands.
Step 2
Pour 650ml of anchovy-kelp broth into a pot. Using a sieve, dissolve 2 tablespoons of store-bought doenjang and 1 tablespoon of homemade doenjang into the broth. Dissolving it smoothly without lumps will result in a cleaner tasting soup.
Step 3
Once the broth starts to boil, add the prepared enoki mushrooms, zucchini, onion, and Cheongyang peppers. Let it simmer over medium heat for about 5 minutes to allow the natural sweetness of the vegetables to infuse into the broth.
Step 4
When the vegetables are partially cooked, add the tofu and green onions. Continue to simmer until the tofu is heated through. Be careful not to overcook the tofu, as it can break apart easily. Add it towards the end of the cooking process.
Step 5
Finally, add the seasonings to deepen and enrich the flavor of the stew. Stir in 1 tablespoon of gochugaru, 1/2 tablespoon of minced garlic, and 1 tablespoon of fish sauce. Bring it to a boil one more time, and your delicious Doenjang Jjigae is ready!
