An incredibly addictive braised chicken galbi that’s always delicious. It’s even better with bean sprouts added! This dish features tender chicken marinated in a perfectly balanced spicy and sweet sauce, simmered in a rich broth. Perfect for a hearty meal or as a fantastic accompaniment to drinks.
Main Ingredients- 500g boneless chicken thigh (cut into bite-sized pieces)
- 100g bean sprouts (rinsed and drained)
- 1 large leek (sliced diagonally)
- 1/2 medium onion (thinly sliced)
- 2 Korean green chilies (finely chopped)
Cooking Instructions
Step 1
Thoroughly rinse the bean sprouts under cold running water and drain them well in a colander. For extra crispiness and to remove any stringy ends, you can trim them.
Step 2
Slice the large leek diagonally at about a 45-degree angle. This cut helps the leek absorb the flavors of the broth and sauce beautifully.
Step 3
Peel the onion, rinse it, and then slice it thinly into long, even strips, about 0.5cm thick. The sweetness of the onion will add depth and a subtle sweetness to the broth.
Step 4
For a nice kick of heat, finely chop the two Korean green chilies. They will add a pleasant spiciness to the broth.
Step 5
Lightly rinse the boneless chicken thigh and cut it into uniform, bite-sized pieces, about 3-4 cm. Using chicken thigh ensures the meat stays tender and juicy throughout the cooking process.
Step 6
Season the cut chicken pieces with a pinch of salt and two pinches of black pepper. Gently toss to coat. This initial seasoning helps to remove any gamey odor from the chicken and allows the flavors to penetrate the meat.
Step 7
In a large bowl, combine the gochugaru, gochujang, mirin, soy sauce, sugar, and minced garlic. Mix everything together thoroughly to create a smooth, well-integrated marinade. The mirin not only adds a touch of sweetness but also helps tenderize the chicken.
Step 8
In a deep pan or pot, add the seasoned chicken, sliced onions, beef bone broth, and water. Bring the mixture to a boil over high heat. Using beef bone broth as a base provides a rich and deep flavor profile.
Step 9
Once the broth comes to a rolling boil, skim off any foam or impurities that rise to the surface. This step is crucial for achieving a clear, clean-tasting broth.
Step 10
After removing the scum, add the prepared bean sprouts, the mixed marinade, sliced leeks, and chopped green chilies to the pot. Cover and simmer for about 5 minutes, allowing the bean sprouts to cook and release their fresh flavor, while all the ingredients meld together. Taste and adjust seasoning if needed, adding a little more soy sauce for saltiness or sugar for sweetness. Enjoy your delicious braised chicken galbi!
