  • 1 cup Beef Brisket (thinly sliced)
  • 2 handfuls Bean Sprouts (approx. 200g)
  • 6 Cheongyang Chili Peppers
  • 2 bowls Cooked Rice (warm)

Seasoning & Others

  • 3 tsp Oyster Sauce
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • Sesame Seeds, to taste
  • Black Pepper, to taste
  • 1/2 tsp Minced Garlic

Cooking Instructions

Step 1

First, wash the bean sprouts thoroughly under running water. Then, drain them well in a colander. This step is crucial to prevent excess water from making the fried rice soggy.

Step 2

Gently pat the beef brisket slices with paper towels to remove any excess moisture. If the slices are large, cut them into bite-sized pieces (about 2-3 cm). If they are already thinly sliced, you can use them as is.

Step 3

Remove the stems from the Cheongyang chili peppers, wash them, and finely chop them. After chopping, rinse the chili peppers briefly under running water to remove some seeds, then squeeze out any excess water by hand. This helps to moderate the spiciness while retaining the flavor.

Step 4

Heat a wok or a large frying pan over medium-high heat. Add the olive oil, then add the beef brisket and minced garlic. Stir-fry until the garlic is fragrant and lightly golden. You want to render the fat from the brisket.

Step 5

Once the beef brisket is mostly cooked and has released some of its savory fat, add the warm cooked rice to the pan. Use a spatula to break up the rice clumps and stir-fry everything together with the brisket. Ensure you keep stirring to prevent the rice from sticking to the bottom.

Cook the bean sprouts just until they are slightly wilted to maintain their crisp texture.

Finally, add the oyster sauce and black pepper. Stir everything well to combine and ensure the seasonings are evenly distributed throughout the rice. The oyster sauce adds a deep umami flavor, and the pepper helps to cut through any richness.

Step 8

Once everything is well-mixed and heated through, turn off the heat. Transfer the delicious fried rice to a serving bowl. Sprinkle with sesame seeds if desired for an extra touch of flavor and visual appeal. Enjoy your meal!
