This recipe features a hearty and spicy seafood ramen, made with two packs of Jin Ramen, plenty of frozen seafood, and fresh scallops and clams. Following the unique Bokja Club style, we’ll use ramen soup powder to achieve a deep, rich broth flavor, similar to Jjamppong, without needing ingredients like bean paste or chili oil. First, sauté minced garlic and chopped green onions in oil, then stir-fry the seafood with the ramen soup powder to infuse it with smoky flavors. Finally, add homemade broth and simmer. The result is a truly exceptional seafood Jjamppong ramen that stands tall against traditionally made Jjamppong. Adjust noodle cooking time to your preference and serve generously for a satisfying meal.

Ingredients

  • 2 packs Jin Ramen
  • 1 Tbsp minced garlic
  • 1/3 green onion, chopped
  • A pinch of minced ginger
  • 1/2 cup frozen seafood mix (shrimp, squid, clams, etc.)
  • Fresh scallops (purged)
  • Fresh clams (purged)
  • Broth (homemade with anchovies, kelp, shrimp heads, shiitake mushroom stems, scallion roots, etc.) or appropriate amount of store-bought broth

Cooking Instructions

Step 1

First, wash the fresh scallops thoroughly. It’s best to purge them in lightly salted water for 2-3 hours, then rinse them multiple times under running water to remove any sand or grit, ensuring a cleaner taste. Purge and clean the clams in the same way.

Prepare the broth that will provide the deep flavor base for this ramen. While anchovies and kelp are standard, adding shrimp heads, the stems of dried shiitake mushrooms, and clean scallion roots will significantly enhance the umami. You can also use store-bought broth, but homemade broth offers a richer flavor. Prepare about 4-5 cups of broth.

In a wide pan or pot, heat 1-2 tablespoons of cooking oil over medium-low heat. Add the minced garlic and chopped green onions, sautéing until fragrant. You’ll know it’s ready when the green onions turn translucent and release a sweet aroma.

Now, add the soup powder from both packs of Jin Ramen and stir-fry them together. Sautéing the soup powder first awakens its flavors and creates a delicious base when combined with the oil.

While sautéing the soup powder, add the purged and cleaned scallops to the pan and stir-fry them together. The scallops will begin to open as they cook slightly.

Next, add the frozen seafood mix and stir-fry it thoroughly with the sautéed minced garlic, green onions, and ramen soup powder. Stir-fry for about 2-3 minutes to allow the seafood to absorb the flavors of the soup powder and scallion oil.

As the soup powder fries, it coats the seafood and vegetables, imparting a beautiful color and a subtle smoky aroma, much like using chili oil. At this stage, add the dried vegetable flakes that come with the ramen soup packet and stir-fry them as well. This adds to the overall richness of the dish.

Pour all the prepared broth into the pan with the well-sautéed seafood and soup base. Once the broth comes to a boil, reduce the heat to medium and simmer for another 3-5 minutes, or until the seafood is fully cooked.

When the broth is boiling vigorously, add the noodles from the two packs of Jin Ramen. There’s no need to add any extra seasoning, as the ramen soup powder has already perfectly balanced all the flavors. Adjust the noodle cooking time according to your preference.

Once the noodles are cooked to your liking, turn off the heat and serve the finished seafood Jjamppong ramen generously in a large bowl.
