Main Ingredients

  • 300g Pork Shoulder (cut into bite-sized pieces)
  • 1/4 Onion (sliced thickly)
  • 1/3 Carrot (thinly sliced into half-moons)
  • 1/4 Zucchini (thinly sliced into half-moons)
  • 1 Potato (cut into bite-sized cubes)
  • 1/2 Green Onion (sliced diagonally)
  • 1 Korean Chili Pepper (sliced diagonally)
  • 2 cups Water (approx. 400ml)

Seasoning Sauce

  • 1 Tbsp Sugar
  • 0.5 Tbsp Anchovy Sauce (or soy sauce if unavailable)
  • 1 Tbsp Mirin (rice wine)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1.5 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced Garlic
  • 0.5 Tbsp Minced Ginger (optional)
  • 0.5 Tbsp Black Pepper

Cooking Instructions

Step 1

First, place the pork shoulder in a ttukbaegi (earthenware pot) or a regular pot and stir-fry over medium heat. It’s important to sauté the pork sufficiently until the surface is nicely browned and the juices are sealed inside. This makes the meat more tender and flavorful.

Once the pork is somewhat cooked, add the cubed potatoes and thinly sliced carrots. Continue to stir-fry them together. The vegetables will absorb the pork fat, creating a deeper flavor. Sauté for about 2-3 more minutes to coat the ingredients with the rendered fat.

Now, pour in 2 cups of water (approx. 400ml) and bring it to a boil over high heat. Once the water is boiling, add all the seasoning ingredients (sugar, anchovy sauce, mirin, gochugaru, gochujang, minced garlic, minced ginger, black pepper) and stir well. Let it simmer until the seasonings are dissolved.

When the stew starts boiling again, add the sliced zucchini, onion, diagonally sliced Korean chili peppers, and green onions. Simmer over medium-low heat until the vegetables are tender. The moisture from the vegetables and the seasoning will thicken the broth, and you’ll start hearing a ‘jjageul jjageul’ sizzling sound. Let it simmer for about 5-7 minutes.
