- 250g Pork shoulder (cut into bite-sized pieces)
- 1/2 block Tofu (cut into cubes)

- 1 stalk Green onion (sliced diagonally)
- 1/2 Tbsp Beef bouillon powder (or anchovy bouillon powder)
- 350ml – 400ml Water
- 1/2 Tbsp Gochugaru (Korean chili flakes)
Seasoned Kimchi
- 350g Aged Kimchi (finely chopped)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar
- 350g Aged Kimchi (finely chopped)
- 1 Tbsp Sugar
- 1 Tbsp Vinegar

Step 1
First, let’s season the kimchi. Prepare your aged kimchi and chop it into pieces about 1cm wide. If your kimchi is too sour, you can add a little more sugar and vinegar.

Place the chopped kimchi in a bowl and add 1 tablespoon of sugar. Sugar helps to balance the sourness of the kimchi and enhances its umami flavor.
