I’ve been getting back into cooking lately, and today I made a pork kimchi stew using the kimchi I had at home, which anyone can easily make. I added plenty of affordable pork shoulder to make it extra delicious. This stew is packed with flavor and is perfect for a comforting meal.

Ingredients

  • Pork shoulder, 300g (cut into bite-sized pieces)
  • Well-fermented kimchi, 1/2 head (chopped into small pieces)
  • Kimchi brine, 1 ladleful (approx. 150ml)
  • Cooking oil, 2 Tbsp
  • Minced garlic, 1 Tbsp
  • Gochugaru (Korean chili flakes), 1 Tbsp (adjust to taste)
  • Fish sauce or soy sauce, 1.5 Tbsp
  • Green onions, 2 handfuls (chopped)

Finely chop half a head of kimchi into bite-sized pieces. This step is crucial for achieving the right texture in the stew.

In a pot, add one ladleful of kimchi brine and all the chopped kimchi. The kimchi brine adds a depth of flavor to the stew.

Sautéing the kimchi is key to a richer taste! Add about 2 Tbsp of cooking oil to the pot with the kimchi. Stir-fry over high heat until the kimchi is thoroughly softened and its flavors have deepened. This process really brings out the best in the kimchi.

Pour 800ml of water into the pot with the sautéed kimchi and bring it to a boil over high heat.

Cut the pork shoulder into bite-sized pieces, about 2-3 cm each. Ensure the pieces are not too small so they don’t break apart during cooking.

Add the pork shoulder to the boiling kimchi stew. Then, add 1 Tbsp of minced garlic, 1 Tbsp of gochugaru, and 1.5 Tbsp of fish sauce (or soy sauce). Stir well and let it simmer vigorously until the pork is fully cooked and tender. If the stew becomes too reduced during cooking, add a little water as needed.

Finally, add about two handfuls of chopped green onions to the kimchi stew and simmer for another minute. This adds a fresh aroma and flavor.
