Main Ingredients

  • Well-fermented Kimchi: 3 cups (chopped into bite-sized pieces)
  • Pork: 300g (stewing cuts, your preferred cut)
  • Tofu: 1/2 block (sliced into 1cm thick pieces)
  • Green Onion: 1 stalk (sliced diagonally)
  • Cheongyang Peppers: 2 (sliced diagonally, optional)

Seasoning & Broth

  • Water: 4 cups (800ml)
  • Salted Shrimp: 1 Tbsp
  • Gochugaru (Korean Chili Flakes): 1 Tbsp
  • Minced Garlic: 1 Tbsp
  • Sugar: 1/2 Tbsp (to balance kimchi’s sourness)
  • Soy Sauce for Soup: 1 Tbsp (for final seasoning, optional)

Cooking Instructions

Step 1

First, prepare 3 cups of kimchi, chopping it into bite-sized pieces. Using aged, well-fermented kimchi will yield a deeper flavor.

Prepare 300g of pork. Cuts like shank, pork belly, or neck are all suitable. A cut with some fat will make the stew richer. (The 320g pork in the photo is for reference; we’ll proceed with 300g).

Slice the 1/2 block of tofu into approximately 1cm thick pieces. This will be added towards the end of cooking.

Slice the green onion diagonally. This will add a fresh aroma to the stew.

Similarly, slice the 2 Cheongyang peppers diagonally. Include them if you enjoy spicy food; you can omit them if you prefer a milder taste.

In a pot, combine the chopped pork, 3 cups (600ml) of water, and 1 Tbsp of salted shrimp. Bring to a simmer over medium heat and cook for about 10 minutes, or until the pork is fully cooked. The salted shrimp tenderizes the meat and adds umami.

Once the pork is cooked, top up the water with about 1 cup (200ml) to compensate for any evaporation. Then, add the chopped kimchi to the pot.

After adding the kimchi, stir in 1 Tbsp of gochugaru, 1 Tbsp of minced garlic, and 1/2 Tbsp of sugar to balance the sourness of the kimchi. (Optional) For a restaurant-quality umami, you can add a small amount of sugar or MSG, but it’s best to let the kimchi’s natural flavor shine. Bring to a boil over high heat.

Once the kimchi has boiled and its flavors have melded, gently add the sliced tofu. Stir carefully to avoid breaking the tofu pieces.

Finally, add the diagonally sliced green onion and Cheongyang peppers, and simmer for a little longer to finish. If desired, add 1 Tbsp of soy sauce for soup for final seasoning.
